One of my passions in life is hot sauce. I am intrested in creating, developing and marketing a hot sauce. What do you look for in terms of heat vs.flavor and what kind of tastes and textures do you like in a hot sauce?

I look for a lot of heat combined with a sweet flavor- I really like the habenero hot sauces more than tabasco.

It may sound odd, but I always mix hot sauce with a little bit of red or green curry. I really gives the sauce another layer of taste.

The heat, or burning sensation, experienced when consuming hot sauce is caused by capsaicin. It is merely a harmless chemical reaction with the body's neurological system.

The seemingly subjective perceived heat of hot sauces can be measured by the Scoville Scale. The Scoville scale number indicates how many times something must be diluted with an equal volume water until people can no longer feel any sensation from the capsaicin.

The hottest hot sauce scientifically possible is one rated at 16,000,000 Scoville units, which is pure capsaicin. Examples of hot sauces marketed as achieving this level of heat are Blair's 16 Million Reserve.

In comparison Tabasco sauce, sold commercially, is only 2,500 - 3,000 on the scale.

In a nut shell. Creating the hottest sauce would require capsaicin which has been diluted to your prefared taste. As for selling the hot sauce, i don't think there will be much of a market for it as there are already alot of brands.

Interesting fact: I have seen bottles of Blair 16 go for over $200-400 USD.

It's ok on some stuff..I like the red and green tabasco and tapatio..and I like this habanero/mango sauce from a local sushi place...but I've been on a jalapeno kick the last couple of years...very fresh ones. I definitely do not like hot sauce on eggs though; for some reason it just grosses me out.

I like a balance between tangy and heat. Flavor is even more important. Some sauces (tabasco) lack the flavor that makes a good sauce. I personally like tha Tapatio sauce.

I'd say it can't be too vinegary first of all, like Tabasco. It has to have some heat, but not set your mouth on fire so you can't even taste the food kind of heat. It can't be too runny either, something that sticks to what you put it on.

Right now my favorites are Louisiana and Frank's.

This may sound funny, but I love hot sauce, too, and Taco bell's little packets marked "hot" are one of my favorites!
I'd say that's medium in terms of heat, and swimming with little gritty pepper flakes.
