I have an awesome recipe for chicken pecan fettucini
Chicken Pecan Fetttucini
1 lb Fettucini, already cooked according to box directions.
1/4 cup olive oil (replaces 1/4 cup butter)
1 20oz pkg of chicken breasts boneless.... cut into dice.
seasoning salt and pepper
3 cloves of garlic chopped
cook until chicken is brown with the salt pepper and garlic. Add to this:
2 8 oz pkg of sliced mushrooms (try baby ports yum)
1 bunch green onions diced up (about a cup)
1/2 cup cooking sherry (I use cheap stuff)
Let all this go til chicken is done and mushrooms and onions soft too. Then;
In a dutch oven size pot (I use same pot I made my pasta in) add:
2 cups of cream
1 stick of butter (sorry guys)
1 cup of grated cheese (parm or romano)
lots of fresh chopped parsley
On Low,Stir constantly, when cheese is just melted in add the fettucini noodles in and combine with sauce well.
Then pour contents of skillet (chicken mixture) over the pasta and sauce and combine all that.
To finish, toast your pecans by tossing them in a hot dry small skillet or saucepan until you can just smell them roasting. You have to constantly be tossing them so they don't burn. Pour your pecans over hot pasta mix and serve right from your dutch oven pan just like I did.

Alfredo Fettuccine
1 pint heavy cream
1 stick (1/2 cup) butter
2 tablespoons cream cheese
1/2 - 3/4 cup Parmesan cheese
1 teaspoon garlic powder, add in more to suit your taste if you prefer
Salt and pepper, to taste
8 ounces fettuccine, cooked and drained
1 boneless skinless chicken breast, cooked and shredded
In a saucepan combine butter, heavy cream, and cream cheese. Simmer this until all is melted, and mixed well. Add the Parmesan cheese and garlic powder. Simmer this for 15 - 20 minutes over low heat. Toss pasta and chicken lightly with sauce, coating well. Leftovers freeze well.

The simplest way these days to prepare a dish like that is to buy prepared Alfredo sauce form your grocer. They are all of good quality like Ragu of Five Brothers. For the chicken all you have to do is either grill some chicken strips or buy already prepared chicken such as Tyson makes.
DiGorno makes great fettuccini that only has to be cooked a short time and tastes more like fresh than the dried noodles.
The total time to make if you use all prepared ingredients is under 15 minutes and the cost is approximately $ 7.50 for four servings.
Can't beat that for time or cost.

Here is a recipe for Fettuccine Alfredo, simply grill some chicken, bake it, or broil it to your liking and add it to the recipe!
Serves 2
1/2 lb fettuccine
1/2 oz butter
3/4 cup heavy cream
3oz parmesan cheese grated fine
salt to taste
peper to taste
1/8 tspn nutmeg
Method:
Cook fettuccine to el dente stage.
While pasta is cooking melt butter in saute pan ovedr high heatuntil butter is lightly browned.
Add 1/2 cup of the cream and boil rapidly until slightly thickened.
Reduce heat to medium.
Drain pasta.
Add half of the cheese,and remaining cream.
Toss gently;add remaining cheese.
Season with salt,peper,and nutmeg.
Serve promptly.ENJOY!!

Chicken Alfredo
3 chicken breasts boned and cut in half
1/2 C. flour
2 eggs beaten
1 C. seasoned Italian breadcrumbs
1/2 C. + 2 T. grated Parmesan cheese
2 T. oil
2 T. parsley fresh chopped or 1 t. dried
salt and pepper to taste
4 T. butter
1 pint heavy cream
4 oz. sliced mozzarella cheese
Add 2 T. of Parmesan cheese to the breadcrumbs. Coat chicken with flour, then dip in eggs and roll in the breadcrumbs.
In a little oil fry chicken on both sides to brown. Place chicken in a baking dish and season with salt, pepper and parsley.
Melt butter and add heavy cream. Stir in Parmesan cheese. Pour over the chicken. Place 1 slice of the cheese on each piece of chicken.
Bake at 350°F. for 30 - 40 minutes.
Serves 4 - 6.

Chicken Alfredo
Quick and easy dinner with broccoli, zucchini, and red
bell pepper.
The sauce is enriched by cream cheese.
Servings: 4
Ingredients:
6 ounces dry fettuccine pasta
1 (8 ounce) package cream cheese
6 tablespoons butter
1/2 cup milk
1/2 teaspoon garlic powder
salt and pepper to taste
2 skinless, boneless chicken breast halves -
cooked and cubed
2 cups chopped fresh broccoli
2 small zucchini, julienned
1/2 cup chopped red bell pepper
Directions:
1. Bring a large pot of lightly salted water to a boil.
Add pasta, and cook for 8 to 10 minutes, or until al
dente; drain.
2. While pasta is cooking, melt cream cheese and butter
in a skillet over low heat.
Stir until smooth.
Stir in milk, and season with garlic powder, salt, and
pepper.
Simmer for 3 minutes, or until thickened, stirring
constantly.
3. Mix in chicken, broccoli, zucchini, and red pepper.
Cook 3 minutes over medium heat, then reduce heat, and
simmer 5 minutes, or until vegetables are tender.
Serve over fettuccine.
Chicken Alfredo Casserole
6 ounces fettucine or medium noodles, cooked and drained
10 ounce package frozen broccoli cuts
3 tablespoons butter or margarine
3 tablespoons flour
1/2 teaspoon dried basil
1/4 teaspoon salt
1/8 teaspoon pepper
2 1/4 cups milk
2 1/4 cups chopped cooked chicken
1/2 cup parmesan cheese, for sauce
1/4 cup parmesan cheese, for top
Cook pasta according to package directions: drain and set aside. Run
water over broccoli to thaw. Sauce: In large saucepan, melt butter or
margarine. Stir in flour, basil, salt, and pepper. Add milk all at
once. cook and stir until thick and bubbly. Cook and stir one minute
more. Remove from heat; Stir in chicken, 1/2 cup Parmesan cheese, and
well drained broccoli. Add pasta and toss to coat. Place chicken
mixture in greased 7 x 12 x 2 inch baking dish. Cover with foil. Bake
at 350F for 20 minutes. Remove foil. Sprinkle 1/4 cup Parmesan
cheese. Bake, uncovered for 5 to 10 minutes more or until heated
through.
Chicken and Broccoli Alfredo
6 oz. uncooked fettuccine
1 cup broccoli flowerets
1 tsp. margarine
6 oz (2) skinless boneless chicken breast halves, cut into cubes
1 can cream of mushroom soup
1/2 c. milk
1/3 cup grated parmesan cheese
Prepare fettuccine according to directions, add broccoli for the last 4
minutes of cooking time. Drain in colander.
In skillet over medium high heat, heat margarine, add chicken add cook
until browned, stirring often.. In same pan mix soup, milk cheese and
fettuccine mixture and cook through, stirring occasionally.
