Throw everything in a slow cooker for about 3 hours on medium except the rice and veggies. Cook the rice as directed on the package and steam the veggies. To bad you don't have any salt or butter cause then you could butter the veggies and salt the chicken concoction served over the rice. Slow cooking will make it so the chicken will fall off the bone easily. You don't wanna choke your friend's boyfriend I hope.

This sounds more like opportunity that a problem. Defrost chicken, season with salt, pepper and chili/or curry and add to a saute pan with olive oil. Lightly brown chicken on all sides. Remove chicken. Add diced onion to the pan and cook in remaining juices until translucent. If you have garlic, too, that would be great! (saute over med. heat but don't brown) add the tomato paste and stir, reducing heat to low and incorporate tomato paste with the onion (and garlic). Do not burn tomato paste/onion mixture. If you have any chicken broth or white wine, add a 1/2 cup after a minute and combine. If you don't have either, add 1/2 cup of another liquid such as water, beer, milk or even melted butter. Add either the curry, chili or both, depends on your mood, really. Add chicken back to sauce and cover. Simmer until chicken is done, add frozen veggies to the chicken and sauce and cook until done. Meanwhile, cook rice according to directions. When chicken is done, place on a bed of cooked rice and spoon the sauce over the whole lovin' mess. Enjoy!

Maybe you could chop up the chicken, stew it in a pot with some onion, a tsp salt and 1/4 tsp pepper. In a while, add a handful of rice and some frozen vegetables. Kind of a soup or stewed chicken. Don't let all the water boil away.
Do you have any Bisquick and milk? There's a recipe for dumplings on that, which could be dropped onto the top. Or, if you have some flour, baking powder, milk and a good recipe you could make dumplings from scratch.
Do you have any bread to serve with this? Any fixings for a tossed salad?

If it were me...
I would prepare the rice, mix in the (cooked) onion with some parsley, chicken boullion powder, a tsp of water and other spices. (If you have any cream soups- such as chicken, mushroom or even celery, I would add it to the rice for consistency)
Then spread the rice mixture into a 13x9 glass pan. Top with chicken thighs (sprinkle some salt and pepper directly onto chicken pieces). Cook for 30 minutes.
Remove and Stir the rice under the chicken to ensure that it all cooks evenly. Replace the chicken and top with tomato paste (make a tomato sauce with water added to the paste) and pour over chicken.
Cook for 30 minutes more or until juices in the chicken run clear!
I make a dish similar to this one with Chicken breasts, rice, cream of chicken soup and cheddar to top the chicken. It's awesome...Maybe I'll try this variation next time!

Sounds like you can make a really good belly warming soup.
Dice up the chix thighs and put in a pot of water and bring to a boil. Add onions, bag of frozen veggies and spices. Low boil from anywhere to an hour or more. The longer the more flavorful. Add rice half hour before you want to eat. MMMMMmmm.
If you half pasta, add the tomato paste and pasta instead of rice and you have a minestrone type soup.
Great for cold days!

-Spanish rice using the tomato paste and onions with the chili seasoning and cumin if you have it. I'd bake the chicken thighs with some complementary seasoning on them also. If you want a one dish meal. Pre cook the chicken then de-bone and cut up in chunks when the rice is almost done add the chicken. Here is a good site for inspiration. Good Luck and keep warm.

chicken, rice and mixed vegetables
2 (10.75 ounce) cans condensed cream of chicken soup
1 whole cooked chicken, cut into pieces
1 (16 ounce) package frozen mixed vegetables, thawed
2 cups cooked rice
2/3 cup water
1/2 cup crushed buttery round crackers
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl combine the soup, chicken, cooked vegetables, cooked rice and water. Mix well and spread mixture in a 9x13 inch baking dish. Sprinkle crushed cracker crumbs on top and bake in the preheated oven for about 15 to 20 minutes. Let cool 10 minutes and serve.

How about chicken caccitore? Using defrosted chicken, tomato paste, onion, garlic(or garlic powder). Brown chicken on all sides, add sliced onion, season chicken with salt, pepper, garlic powder(or add minced garlic), oregano, basil. (If you have these spices, or Italian seasoning instead of theses spices).Pour tomato paste mixed with water into pan. Cover and simmer until chicken is cooked through.(Approximately one hour) Serve over rice. Cook frozen vegetables as a side dish.

If you're a decent cook try chicken over rice with gravy. Veggies on the side and a drink. In the future, don't let your supplies get so low, especially if you live in a snow prone area.

you can make some spanish rice using the rice,onions,tomato paste and put the thighs in there to cook with it...(you will need oil and water to cook the rice)...
saute some diced onions in oil until clear, add rice and water (1C rice, 2 C water) and tomato paste(the more tomatoe paste the better i find) at the end of the rice cooking add the thighs...you can also saute the thighs in oil before puting then in the rice
