I love making chocolate chip or oatmeal cookies but they always get hard after I take them out of the oven. They taste good but I prefer soft cookies to hard, crunchy ones. Help!

cut back on the oven time, and adjust your flour to butter ratio. More flour (just a bit) will make them a little more thick and not so flat. The reason the yget hard is because you have baked ALL the moisture out. So cut the time alittle.

Don't overmix the dough or use too much flour (use a little less than the recipe calls for) If a recipe says to bake the cookies for 10 to 12 minutes, go with 10 minutes (in other words, bake the minimum amount of time). Let your cookies stand on the baking sheet for a couple of minutes and then move them to the counter to cool. Don't use a wire rack to cool them on, because you don't want them to get the air flow from the openings in the rack. Use a light baking sheet (dark-colored ones cause more browning). Store cookies in an air-tight container with a piece of white bread (this will keep them soft).

I have perfected my own recipe for homemade choc chip cookies, and the trick is not to overbake. A lot of recipes call for 375* oven temp for 10 minutes, but I say cut it down to 7 or 8 minutes tops! Cookies harden while they cool, but the inside will be moist and gooey. If you try adding more butter, egg, or other "liquid" ingredients your cookies are bound to be more thin and flat, so I don't recommend that. Just take them out of the oven a bit earlier each time until you find the right timing!

I LOVE a soft chocolate chip cookie...I have made many batches in the attempt to figure out the "perfect" method. In my opinion, the best way to keep cookies soft, is to remove them from the oven a little early (once they have just begun to turn golden) and allow them to cook an additional 2 or 3 minutes on the cookie sheet. This keeps them soft and yummy...

Also, make sure that when you store them, they are in an air-tight container...

The consistency of a cookie also depends on the recipe...maybe try a recipe with different ingredients unless you are in love with your own recipe!

Cookies always firm up a bit while they cool, so take them out of the oven sooner while they are still quite soft. You can also adjust your recipe by using more liquid ingredients but its better to just cut back a bit on your baking time and then store them in an airtight container as soon as they have cooled off a bit (they can still be a bit warm)

Don't worry about them getting hard. Just put them in the microwave for a few seconds before you eat them. They taste like you just took them out of the oven.

When you take them out of the oven, hot, cover them with a clean, damp cloth. When they cool down, keep them in an air-tight jar or tin. They should stay tender and fresh.

put the cookies between pieces of bread.. lay bread down then place cookies ontop then top the cookies with pieces of bread-- the moisture is sucked from the bread and added to the cookies -- it soo works
