Cheese Omelet Recipe courtesy the Waffle House
Makes 1 serving
3 large Grade A eggs
2 slices American cheese
2 tablespoons vegetable oil
Equipment: 9-inch non-stick skillet and an immersion blender
Add oil to the skillet over high heat, and heat it until small hairline ripples
appear on the surface of the oil.
Break the eggs into tall glass or frappe cup and whisk to blend for 1 minute.
(The Waffle House uses a 15,000 rpm malt shop mixer.)
While moving the skillet in a circular motion, pour in the eggs. Continue to
move the skillet in a circular motion, allowing the outside of the eggs to cook
and fluff up. When the outside edges have firmly cooked, flip the omelet and
cook on the other side for approximately 30 seconds. Keep moving the pan in a
circular motion, but not as often as before it was flipped. (Too much movement
at this time will cause the omelet to fall.) Flip the omelet once more to finish
cooking--no more than 30 additional seconds.
Overlap 2 slices of American cheese in the center of the omelet in a diamond
shape.
Fold the omelet in half, being certain to cover the cheese slices, and slide it
onto your plate.

Omelets can be made to contain one or more different ingredients. These may be onions, tomatoes, green peppers, diced ham, ground beef or chicken, etc, etc.
Waffle house's secret in making them so fluffy is by putting the eggs in an electric egg beater before pouring the beaten eggs into the pan. After turning the beaten eggs over, the ingredients are placed and the other half of the half cooked eggs is turned over the ingredients. You can put as much shredded cheese as you like with the ingredients to make it taste as cheesy as you want.

OMG. I actually have the answer for this. Waffle house has super fluffy omlettes, a way I also appreciate and found how they (or at least "I") do it. You just need a blender. I am a regular omlette maker...and I use a "Bullet" type blender to make it. Recipe: 2-3 eggs and a "dash" of milk is what I use (probs 2-3 tablespoons, but I just do a quick dump) into a blender (any blender)...then run it around for a few seconds. THAT IS IT. Just aerate the eggs, which you can't do fast enough independently, (by using a blender) and you are left with Waffle House Omelets. I use a smaller (easy to flip with a spatula) non-stick pan for doing them in. I cook them, moving the eggs around by placing the spatula in the middle of the omlette and pushing it around to allow uncooked egg to slide under...until I can't get enough egg to "slide under" anymore...then it's easy to flip. Flip it over, and immediately add your toppings to one side of it, and then fold it over and dump it onto a plate.

Quite honestly don't know, but you make omelets fluffier by adding water or skim milk to the eggs, then mixing like crazy. Do they add the cheese to the eggs before it is cooked or on top?

I work for hudle house and its the same we use box batter and put it in the waffle iron on timer thats it and for the omlets someone said we put in shake mixer and beat them thats why so fluffy we add cheese after
