He used really thick oil paints. But I believe most dedicated artists of his time made their own paints (crushed their own pigments and mixed with oils and such). There is also a theory that Van gogh may have consumed lead through the paints he used (by pinching the brush tips together with his mouth) and thereby explaining his eccentric behavior.

Vincent van Gogh painted at a time when mass-produced art supplies were first commonplace and cheap. He did not make his own supplies; rather, he used store-bought tube oils and brushes. He stretched and primed his own canvases. Van Gogh left a lot of records of his life, mostly in the form of letters to his brother Theo, but he never mentioned any brands of supplies he favored. Many of his contemporaries, like Monet and Munch, used much the same art supplies as he did.

As he was obsessed with painting he used everything he could beg, borrow or scrounge. Often he went without food so he could buy paint. The only person who supported him was his brother Theo, so he was often living in very straitened circumstances. He used oils mostly, though also pen and ink for sketching.
