I use oregano sometimes when cooking with red meat. If chicken, then parsley in a garlic and olive oil baste.

And also,

Pepper is a spice, not an herb.

There is a difference.

I like to use a lot of garlic and oregano in just about anything and sometimes basil...especially if it is fresh
