Macroni La Mexicana
Ingredients
1 cup boiled macroni;
1/2 kg tomatoes;
1 big onion chopped;
1 capcicum chopped;
1/4th teaspoon oregano or
Ajwaain;
Salt;
Sugar;
Red chilli powder adjust
according to taste
For the paneer balls:
2 tablespoon maida;
salt to taste;
2 green chillies chopped;
1 tablespoon chopped coriander leaves;
1/8 teaspoon soda-bi-carb
For the sour cream:
2 tablespoon cream;
2 tablespoon grated cheese;
1 tablespoon lemon juice.
Grated cheese for garnishing.
METHOD:
Wash tomatoes. Blanch the tomatoes. Remove skin and chop them. Heat 3-4 tablespoon of oil. Fry onion and capcicum. Add tomatoes and other ingredients except macroni. Cook for 5 minutes.Add macroni. Again cook for a few minutes.
METHOD FOR PANEER BALLS:
Mix paneer, maida, salt to taste, green chillies chopped, coriander, soda. Make small balls and deep fry in oil.
FOR THE SOUR CREAM;
Mix cream, grated cheese and 1 tablespoon lemon juice.
ASSEMBLING:
Spread the macroni mixture in a greased baking dish.
Layer with paneer balls.
Spread the sour cream.
Sprinkle grated cheese and bake for 12-15 minutes at 180 degree centigrade.
(Note: Red chilli powder is prepared by roasting dry red chillies. Then it is to be grinded in the mixie.)

Mexican Baked Macaroni (Macarrones yucatecos).
This is a great garnish for a christmas meal, in Mexico we cook it along with the traditional romeritos with mole, I'll upload the recipe soon!
Serves 4.
Ingredients:
500 gms Macaroni
Butter (as much as you may need)
Olive Oil (as much as you may need)
Tomato sauce 2 big cans
Grated Cheddar Cheese 2 cups
Breadcrumbs 1 cup
Salt
Instructions:
Preheat oven to 250 degrees
Cook the macaroni following the instructions of the package.
Place a saucepan in high heat and add four spoons of olive oil, when the oil is hot add the tomato sauce and cook for at least ten minutes or when the sauce changes color(you can season the sauce to your taste), add the salt. Remove from heat and let cool.
In a big bowl place the breadcrumbs and the cheese and mix them with your hands well.
Take a large oven refractory and grease it well with butter, then add a thin layer of tomato sauce, then a layer of macaroni, using half the macaroni.
Put some sauce on top of the macaroni so that it covers it completely, then add half the mixture of cheese making sure that it is spread evenly, take three spoons of olive and spread them over the first layer, then cut some small pieces of butter and spread them. Repeat the operation with the other half of the ingredients.
Bake in the oven until the cheese is a brownish color.
Let cool for five minutes then serve warm.

Instructions
Recipe by: Skim the Fat - American Dietetic Assoc. (AAL) 1. Saute
onion, green pepper, and celery in a large nonstick frying pan until
onion is clear. Remove from pan. Add beef and cook until beef is
lightly browned. Drain. 2. Break up large pieces of tomatoes. Add
tomatoes, tomato puree, vegetables, and seasonings to beef mixture.
Simmer 15 minutes to blend flavors. 3. Stir in macaroni. Heat to
serving temperature.

You can try............
3 cups macaroni
1 cup diced tomatoes
1 (4 ounce) can chopped green chilies, drained
1 (2 ounce) jar diced pimentos, drained
1 cup half-and-half
1/2 cup shredded cheddar cheese
1/2 cup sliced ripe olives
1 teaspoon salt
1 tablespoon taco seasoning
Cook macaroni acc to directions; drain.
Add all remaining ingredients.
Cook on low, stirring occasionally until cheese is melted and sauce is hot.
or .............LOW FAT
8 ounces uncooked elbow macaroni
5 ounces light processed cheese (Light Velveeta)
1 teaspoon taco seasoning
1/2 cup salsa
Boil water for the macaroni. Cook the noodles in the water until done, usually 7-9 minutes.
While the noodles are cooking cube the cheese.
When the noodles are done drain them and then return to the pan.
Add the cubed cheese and taco seasoning. Stir well, until the cheese is melted.
When melted, add the salsa and serve.

I don't know about any particular recipe. I simply cheat and top plain old mac & cheese with salsa.
