I'm cooking dinner for my boyfriend tonight and I want to make Sante Fe style tacos. I want to make them with chicken, but I have no cooking experience. I know that I'm supposed to buy boneless chicken, but what kind should I get? And how do I cook it?

Santa Fe Tacos

1 package JENNIE-O TURKEY STORE® Turkey Breast Cutlets
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 3/4 teaspoon salt
- 1 tablespoon vegetable oil
- 1 yellow or green bell pepper, diced
- 2 teaspoons bottled or fresh minced garlic
- 2 tablespoons bottled or fresh minced jalapeños
- 1/4 cup canned chicken broth or picante sauce
- 1 large tomato, diced
- 1/4 cup chopped cilantro
- 16 MANNY'S™ Yellow Taco Shells or MANNY'S™ Soft Taco Flour Tortillas
- 2 cups (8 oz.) crumbled queso fresco cheese or shredded Mexican cheese
- Optional toppings: Salsa or picante sauce, shredded lettuce, sour cream, diced avocado or guacamole

Directions
Cut turkey into 1/2-inch chunks; toss with chili powder and salt. Heat oil in a large deep skillet over medium-high heat. Add turkey, bell pepper, garlic, ground cumin and jalapeños. Stir-fry 5 minutes or until turkey is no longer pink in center. Add broth; simmer uncovered 3 minutes, stirring occasionally. Stir in tomato and cilantro; heat through. Spoon mixture into taco shells; sprinkle with cheese and serve with toppings as desired. Makes 8 servings.

Mix together marinade ingredients in a bowl, stirring thoroughly. Pour into a shallow baking pan and lay the chicken breasts inches Cover and refrigerate for 1 hour.
Preheat the broiler.
After 1 hour, when the chicken has absorbed all the flavors of the marinade, pour in the white wine. Broil the chicken under a medium flame for 8-10 minutes, basting it with the juices to keep it moist.
Transfer the chicken to a platter and slice it at an angle. Garnish each piece with a little of the pan juices, a dollop of Mock Sour Cream or low-fat sour cream, slices of lime, and a scallion firecracker, as well as a dollop of salsa.
