The reason is, that we believe that the vitamins are kept in the raw fruits when eaten raw they must have the peel on them to have the whole source of vitamins Once they are boiled some of the nutrients go into the cooking water and we loose some of the vitamins . If you drink the water as well then you do not loose anything ,but I believe that cooked fruits and vegetables are easier to digest than the raw produce it's all a matter of preference at the end.

Some people do not like eating raw vegetables so they end up cooking it so that it'll taste better. Some also do it to kill all of the germs and bacteria growing on the food.

I personally love eating raw fruits and vegetables, especially with some kind of sauce like Ranch dressing.

A bad thing about cooking your vegetables is that all the vitamins and nutrients in them will get boiled away. What you can do is steaming them...that'll give you the softness (like from cooking them) without taking out all the good stuff!

You can. I've never had problems eating raw food after washing. Even after the spinach/lettuce/green onion scares. Just wash well and eat as normal!

Oh, and all those spices? You do know that for over 1000 years spices have been used as preservatives? You're totally fine with washing your fruits and veggies.
