~~~~~~~~ Baked Spinach Stuffed Clams ~~~~~~~~
Serves 4 / Prep: 15 mins / Cook: 25 mins
Fresh bread crumbs are easy to make; a half slice of firm-textured white bread will yield the 1/3 cup crumbs you'll need for this recipe. Tear the bread into largish pieces, then chop it in a mini-food processor, using on/off pulses, until it's coarsely crumbled.
1 dozen cherrystone or other medium size hardshell clams
4 tsp olive oil
1/4 cup finely chopped onion
2 cloves garlic, minced
4 tsp flour
2/3 cup low-fat (1%) milk
1/2 tsp salt
1/8 tsp cayenne pepper
1/3 cup frozen chopped spinach
1/3 cup fresh bread crumbs
2 tbsp grated Parmesan cheese
1. Place the clams in a large skillet with 1/2 inch of water. Bring to a boil, cover, and cook for 4 minutes or until the clams open. (Start checking after 2 minutes and remove the clams as they open; discard any that do not.) Transfer the clams to a bowl; when cool enough to handle, remove the top shell halves and discard. Place the shell halves with clams attached on a baking sheet.
2. Preheat the oven to 450 deg F. In a small saucepan, heat 2 tsp of the oil over low heat. Add the onion and garlic, and saute for 5 minutes or until soft. Whisk in the flour and cook for 1 minute. Whisk in the milk, salt, and cayenne, and cook for 3 minutes or until lightly thickened. Stir in the spinach.
3. In small bowl, stir together the bread crumbs and Parmesan. Spoon the spinach mixture over the clams. Top with the bread-crumb mixture and drizzle with the remaining 2 tsp oil. Bake for 10 minutes or until the clams are piping hot and the crumbs are lightly crisped.

You don't have to always follow a recipe word for word, you can substitute it with something else. Some recipes give you other options instead of wine too. You can always use some sort of broth or like a red wine vinegar too. It depends on what your going to eat with the clams...you can always add things to the water to give it that taste in the clams.

The recipes that all call for wine is so, as they it, flavor. The wine has, after it evaporates off, is deep, fruity, or bold. It all depends on the region or the wine itself. I found that you can use water and then season it with the spices or leaves thatyou like or you can use stock turkey, chicken, or beef. How ever you like to do is up to you. Cooking this or really anything that is new is up to you so you can develop your tastes or just simlpy have fun with it. You never know, you might just come up a flavor that will be different or surprising.

You can make a little broth using water to replace the wine a carrot an onion and some celery
if you like pepper add a few whole pepper grains a dash of salt if you like ,boil until tender and add you clams until they open and enjoy!

You can follow the recipies given for time and such, and if you do not want to use wine(which is a very good way to do it) you can go with chicken stock with a touch of cider vinager for the tang that wine would have given you. But please do not pass on the garlic, well, since I am not there to eat, do what you will, lol. I hope this helps you, I dont have a source for this, but I have done it with mussels.

yes get a large pot of water bring to a boil then place a food strainer on top place clams in stariner wait till they start to open
then you can eat them,but the ones that don't open throw away their no good....don't forget the cocktail sauce... or melted butter...
