What does the flour do? Why not dip chicken in eggs and then directly into the breadcrumbs?

The flour helps the egg stick to the food. Otherwise the egg just slides off. The egg gets the breadcrumd to stick.

The reason for the flour is to act as a coating
As the chicken is wet there would be no stopping you from just putting breadcrumbs on
but
what would happen is that the chicken itself would cook and go brown
So you need to put the flour on so the egg has something to sit in so the breadcrumbs can go on

Also, so the chicken dosent dry out as you cook it

Flour actually pluses out the negative grease or fat content, allows the food to cook without burning to soon. If you make a quiche....be sure to dust the grated cheese with four too, all that greasiness cheese produces will disappear.

flour kinda holds the bread crumbs in place and makes it so you dont get egg all over the kitchen
