Chocolate Marble cream cheese Pie

This is a recipe I got from another group and it was posted by quietmidnite.
It is really a great tasting pie. My neighbor told me it was the best
chocolate pie he had eaten. I found it to be very creamy and easy to make.
It is one I will make often.

Chocolate Marble Cream Cheese Pie
9-inch pie Serves 8

Filling:

8 ounces cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 egg yolks
1 teaspoon unflavored gelatin
1/2 cup water
1 cup whipping cream
4 ounces semisweet chocolate, melted
Cookie Crust (to follow)
Strawberries, optional
Pecan Halves, optional

Cookie Crust:
1 1/2 cups chocolate cookie crumbs
2 tablespoons granulated sugar
6 tablespoons melted butter
Combine crust ingredients and press into 9-inch pie plate, Bake at 350° for
8 minutes. Cool.

Filling Preparation:

Beat cream cheese, sugar, and vanilla until smooth. Beat in yolks, one at a time until well-blended. Combine gelatin and water in small saucepan over low heat. Stir until gelatin is dissolved. Cool slightly. Beat gelatin
mixture into batter. Combine 3/4 cup batter and melted chocolate. Whip
cream until soft peaks form. Fold one-half of whipped cream into chocolate batter and remaining half into vanilla batter. With large spoon alternately place spoonfuls of chocolate and vanilla batters into crust until all batter is used. With small spatula or knife, swirl batter to form marble pattern. Chill for at least 3 hours. Garnish with strawberries and/or pecans, if desired.

My mother made the best chocolate cream pie in the world...I was stunned when I grew up and she gave me the recipe...now I make the best chocolate cream pie in the world, and it's killer easy. I've tried using recipes with other forms of chocolate, but really do like this better!

Bake a single pie shell of your choice according to package directions.

Take 2 large boxes of Jello Chocolate pudding (cook-able kind, not instant), add whatever amount of milk the package calls for on the box for making a pie, of course double it, since you're using 2 boxes. Now, here's what makes it killer...when you mix the milk and pudding mix, add 6 egg yolks. I save the whites in a separate bowl because I make my pie as a meringue topped creation.

Stir mixture with a whisk until it starts to boil, cool for a little while, then pour into prepared pie shell. Cover with plastic wrap and refrigerate. You can top with whipped cream if you wish, of follow any available directions for making meringue.

1 2/3 cups water
3 tablespoons cornstarch
5 tablespoons cocoa
1 (14 ounce) can eagle brand sweetened condensed milk
3 egg yolks, beaten
2 tablespoons butter
1 teaspoon vanilla
1 (9 inch) baked pastry shells

Mix water and cornstarch and cocoa until smooth.
Sir in Eagle Brand milk and egg yolks.
Cook until thick in saucepan or microwave.
Stir in 2 tablespoons butter.
Add vanilla.
Cool slightly (stirring occasionally).
Pour into baked pie shell.
For meringue: Preheat oven to 400°.
Top with meringue and brown.
Or may top with whipped cream after chilling pie.

Chocolate Cream Pie II

INGREDIENTS
1 (9 inch) pie crust, baked
3 egg yolks, beaten
1 1/2 cups white sugar
3 tablespoons cornstarch
1/2 cup unsweetened cocoa powder
1/2 teaspoon salt
3 cups milk
1 tablespoon butter
1 1/2 teaspoons vanilla extract
1 cup frozen whipped topping, thawed
DIRECTIONS
In a large mixing bowl, cream together egg yolks and sugar. Mix in cornstarch, cocoa powder, and salt. Add milk and stir gently.
Pour mixture into a large saucepan and cook over medium heat, stirring constantly, until boiling. Remove from heat. Stir in butter or margarine and vanilla extract. Cool slightly, then pour mixture into pastry shell. Chill before serving. Garnish with whipped topping.

Serves 8

White Chocolate Cream Pie

INGREDIENTS
5 (1 ounce) squares white chocolate, chopped
3 tablespoons heavy cream
1 (3 ounce) package cream cheese, softened
2/3 cup confectioners' sugar
1 cup whipped cream
1 (9 inch) pie shell, baked

1 (1 ounce) square white chocolate, melted
DIRECTIONS
Microwave 5 squares white chocolate and 3 tablespoons of cream in large microwave-safe bowl on HIGH 1 1/2 to 2 minutes or until chocolate is almost melted, stirring halfway through heating time. Stir until white chocolate is melted and mixture is smooth.
Beat in softened cream cheese and confectioners' sugar. Gently fold in the whipped cream until no streaks remain. Spoon into crust.
Melt remaining square of white chocolate in the microwave. Drizzle melted white chocolate on top of pie. Chill in refrigerator overnight.

Serves 8

INGREDIENTS:

* 3/4 cup sugar
* 1/3 cup cornstarch
* 2 squares unsweetened baking chocolate, cut in small pieces
* 1/2 teaspoon salt
* 2 1/2 cups milk
* 3 egg yolks, beaten
* 1/2 teaspoon vanilla extract
* 1 pastry shell, 9-inch, baked
* .
* Chocolate Cream Pie Whipped Topping
* .
* 1 cup heavy cream
* 2 tablespoons confectioners' sugar
* 1/2 teaspoon vanilla extract

PREPARATION:
In top of a double boiler, combine sugar, cornstarch, chocolate, and salt. Stir in milk. Cook mixture over boiling water, stirring constantly, for about 10 minutes, or until chocolate mixture has thickened. Continue to cook for about 10 minutes longer, stirring occasionally.

Gradually stir half of the hot chocolate mixture into beaten egg yolks; return egg mixture to the double boiler, stirring well. Cook over boiling water, stirring occasionally, for 5 minutes. Remove from heat; stir in 1/2 teaspoon vanilla extract. Pour filling into a baked pie shell.

Chill chocolate cream pie thoroughly in refrigerator, about 3 to 4 hours. In a mixing bowl, beat cream with confectioners' sugar and 1/2 teaspoon vanilla extract until stiff. Spread over chocolate cream pie and return to refrigerator until serving time. Store leftover chocolate cream pie in refrigerator.
