Why do you store them in a fridge ?
jonions, potatoes, ginger, garlic, should be kept in a plastic container, which has holes, for the air to circulate.
due to moisture, it's common, that they get sprouted, thus spoiling the quality of the stuff.
so i will tell you what to do !
remove only the sprouts, and keep them only for another 2\3 days only.
peel, wash and use. while peeling, you will see some greenish color, peel deeper, cut away the potato till you get clear light yellow colour, and use, cook well, add green chillies, some turmeric powder, oil for frying, and eat.
do not make mashed potatoes, the taste will be different.

It's cool and dark under ground too. It isn't advisable to store potatoes in the fridge. It is generally suggested that one stores them as they are at the market. Room temperature is best in a dark place.
I've eaten potatoes that have sprouted and suffered no ill affects.

Don't keep your potatoes in the fridge, they are sprouting because they reckon they are underground, dark and cold!! just peel them and the will be fine, next time keep them in a vegie rack and they will last longer

Potatoes sprout as a part of their reproductive process; you can plant the sprouts to grow more potatoes. Yes, they are safe to eat.

Remove the sprouts and the potatoes will be fine. Always cut away any green bits on the skin - bad for you!

No probs, you can still eat them. DO be sure though to check for any green areas on the skin as this indicates your potatoe has gon poisonous. It ain't gonna kill you but it's not healthy and it could well harm littel babies by the way. If you find green bits throw away the whole potato as the poison is not contained to the green area!

apparently, so. Although, i would cook them thoroughly and ensure there is no green stuff on them because this will ruin the taste and i think is slightly poisinous. They will still cook fine. Potatoes grow underground fine where it is cold and dark so why can't they grow in the fridge?

definite. human beings used to dig "potato holes" under their residences to maintain potatoes in so as that they might final interior the direction of the wintry climate. it is barely the character of a healthful potato to attempt to sprout (improve). yes it is ok..i use them all the time when they do..just cut off the sprouts..it will not harm you...but the potatoe your'll find it is a bit softer cause the potatoe it self is putting all it's juices into the sprouts..but they are still ok to cook and eat..

Yes its OK. It may be that your fridge is a bit warm. It should be 5 degrees or under get a fridge thermometer and check it.
