Simply wash, drain and remove the tough stems from your fresh spinach.
Heat 1 clove garlic in1 Tbs. butter or oil. Add your spinach, cover pan and let the spinach cook down in the water still clinging to its leaves.
Stir spinach a couple of times during the 5 minutes it will take to cook. Add salt to taste and it's ready to eat.

Fresh spinach is easy to cook. Sautee it in a pan with olive oil. Let it simmer down until it's nice and soft. Spinach is very watery. You can also add a small amount of white wine and even add some finely diced garlic to give it more flavor.
Pile the spinach high in the pan with olive oil (just coat the pan with the olive oil - but don't over do it) have your temperature on high at first, let the spinach simmer down and then you can turn the dial down to med-low. Stir and fold the spinach from top to bottom to coat all the spinach. Should only take 10 minutes.

Rinse spinach under cold running water (there will be small amounts of dirt), drain and cook it in a large frying pan or pot with whatever water remains on the leaves. Don't worry. There will be more than enough water and you will be surprised by how much smaller the bunch is after cooking. It will cook in 3-5 minutes at most and render lots of liquid. Drain in a colander. Serve with butter, salt, pepper and fresh ground nutmeg.

You can use canned or frozen(thawed)spinach in this recipe. Just make sure you squeeze as much of the water out, as you can. Pound out about 4 boneless chicken breasts, till thin. Put a little spinach on each breast and top with cheese of your choice(you can also add some ham to this). Roll the chicken up and put in baking pan. Bake in 350 degree oven for about 30 to 45 minutes. You can pour warm marinara sauce over the chicken before serving(Or a can of cream of mushroom or chicken soup). Can be served with pasta. I also make a spinach lasagna...super! Instead of meat, use spinach.

Here is a recipe for you that you don't have to cook
Ridgerunner's Blended Spinach Salad
1 cup pineapple
1 orange
1 pear
1 apple (or a couple carrots)
1/8 slice lemon with peel
1 tbsp ground flaxseed
1 cup frozen blueberries
1 large handful raw spinach (about 8 oz - yes, 1/2 lb!)
First blend the pineapple, orange, pear, apple, lemon and flaxseed to a nice fluid. Add the frozen blueberries and blend them in. Last, add the spinach and blend for 20-30 seconds until smooth. It looks horrible (purplish brown) but tastes delicious! (and you will be surprized how much it "compresses down" with blending - 1/2 lb compresses down to about 1 cup fluid).
I started off just adding spinach to the carrot citrus cocktail we all love, but gradually started adding more fruits. The secret is to have lots of sweet and fluidy fruits to overwhelm the subtle flavor of spinach. You CANNOT taste the spinach - I guarantee it!

sparkling spinach cooks very right away! I continuously saute mine in somewhat olive oil over medium low warmth. I upload somewhat lemon zest besides as some pine nuts if I actually have them available.

we usually steam spinach. then put salt and butter on it. we also do a baked spinach (it has bacon,chicken broth,sour cream,onion,liquid smoke,parmesan and butter in it) i also enjoy just raw spinach with fresh mushrooms and parmesan cheese, then top with vinegar and oil or ranch dressing. hard to describe taste
