1.0 uncooked lb spaghetti
1.0 cut against the grain, into thin strips flank steak
0.33 cup light soy sauce
1.0 halved and sliced red bell pepper
2.0 sliced into 1/4 inch rounds carrot
2.0 sliced bunch scallion
1. Prepare pasta according to package directions; drain.
2. In a non-stick skillet, saute the flank steak over high heat.
3. If it begins to stick, add a little soy sauce, one tablespoon at a time.
4. When the steak is cooked through, reduce the heat to medium-low and add the soy sauce, red bell pepper, carrots and scallions.
5. Increase heat to medium-high and cook three minutes.
6. Toss with pasta and serve.
7. TIP: Choose a 12-16 ounce size flank steak.

12 ounces fettuccine, uncooked
2 green bell peppers and 1 jalapeno poblano chile
1 tbsp. olive oil
1 finely diced small red onion
2 tsp. garlic, minced
1/3 cup dry red wine
1 15 oz can plum tomatoes, with liquid, coarsely chopped
2 tsp. fresh basil, thinly sliced
1/2 tsp. sugar
salt and pepper, to taste
1 cup goat cheese
1. Roast the poblanos (or the green peppers and the jalapeño) directly over a gas jet of the range (or under a pre-heated broiler), turning them often with a pair of tongs, until blackened on all sides. Transfer them to a bowl and cover tightly with plastic wrap. Let stand until cool.
2. Cut the peppers in half lengthwise and remove the stem and seeds. Scrape off the blackened skin of the pepper. Cut the peppers into 1/2-inch cubes.
3. Heat the oil in a medium saucepan over medium heat.
4. Add the onion and garlic and cook, stirring, until the onion is softened, about 3 minutes.
5. Pour in the wine, increase the heat to high and boil until the wine is reduced to 1 tablespoon.
6. Add the tomatoes and two-thirds of the peppers and heat to boiling. Reduce the heat to a simmer and cook until the tomatoes are very tender, about 20 minutes. Stir occasionally to break up the tomato pieces.
7. Add the basil, sugar and salt and pepper to taste.
8. Combine the goat cheese and the remaining peppers in a food processor or blender. Process until the peppers are finely chopped and the cheese is very creamy.
9. Prepare pasta according to package directions. Drain the pasta and return it to the pot.
10. Add the tomato sauce and half the cheese mixture and cook over medium heat until the cheese is melted and the pasta is coated with the sauce.
11. Transfer pasta to a serving bowl. Serve, passing the remaining goat cheese separately.

i know that you are looking for a pasta dish. but here is a dish that will impress anyone. it is my own recipe for stuffed rock cornish hens.
2 tyson rock cornish hens
stove top stuffing
italian dressing
honey
bbq sauce
first, make the stuffing in the microwave then stuffed the uncooked hens until the filling comes out.
in a small bowl add 1/2 cup of honey with 1 cup of italian dressing and put in microwave for approx. 1 1/2 min. then add 1-2 tablespoons of bbq sauce. mix well.
apply mixture to uncooked hens. pre-heat oven at 350.
baste hens every 10-15 minutes with mixture. cooking time is approx 1 hour 30 minutes- 1 hour 45 minutes depending on oven. you will know best when the skin between the leg and the breast pops when applying mixture. the juices will run clear.
there hasn't yet been a person that has not enjoyed my hens.

Baked American Spaghetti
Serves 4
8 oz. Spaghetti, Linguine or Thin Spaghetti, uncooked
1 large onion, chopped
1 garlic clove, peeled and quartered
1 pound lean ground beef
1 14-oz. can tomatoes, undrained
1 10-oz. can low-sodium tomato sauce
1 1/2 cups water, divided
2 tsp. Italian seasoning
1 1/2 tsp. salt
3/4 cup grated Cheddar or Monterey Jack cheese
In a large frying pan, cook onion, garlic and ground beef over medium heat until beef is browned; drain. Add tomatoes, tomato sauce, one cup of water, Italian seasoning and salt. Simmer for 5 minutes, stirring occasionally.
While meat mixture is simmering, break spaghetti strands into three parts. Place in an oven-proof casserole dish. Add another half cup of water and mix. Add meat mixture and combine all ingredients. Cover the casserole with aluminum foil and bake at 350-o F for 40 minutes. Uncover casserole and bake for an additional 10 minutes.

Steak & Spinach Roll-Up Roast
Serves 4
Serve a salad with this delicious meat & veggie combo and you've got one of the easiest meals ever.
8 slices bacon
1 to 1 1/2-pound beef flank steak
3/4 tsp lemon-pepper seasoning
1/4 tsp salt
1 10-oz package frozen chopped spinach, thawed and well drained
2 Tbsp fine dry bread crumbs
1/2 tsp dried thyme, crushed
Dash salt
Pre-heat oven to 375F.
ln a large skillet cook bacon over medium heat for a few minutes just until brown but not crisp. Remove from skillet; drain on paper towels. Set aside.
Score both sides of steak by making shallow diagonal cuts at 1-inch intervals in a diamond pattern. Place steak between two pieces of plastic wrap or waxed paper. With a meat mallet pound steak into a roughly 12x8-inch rectangle. Remove plastic wrap (duuh) and sprinkle with 1/2 tsp of the lemon-pepper seasoning and the 1/4 tsp salt. Arrange bacon lengthwise on steak.
For the stuffing combine spinach, bread crumbs, thyme, the remaining l/4 tsp lemon-pepper seasoning, and the dash salt. Spread over bacon.
Starting from a short side, roll up the steak and secure with cooking twine. Roast for about 12 minutes for medium doneness, more or less to taste.
