Jam is preserved with sugar so it is not a good place for bacteria to grow. Pickled onion has a pH that makes it resistant to bacteria as well. Raw meat however is a great place for bacteria to live and gow. You should always store raw meat under 40 degrees and cook it to a temperature of at least 140 degrees.

Sorry to contradict greenhat - store meat under 40 deg - do you wanna die? should be stored at min 4deg celsius ( this is the 21st century!!) & cooked - depending on what type of meat to a minimum of 68deg ( chicken 72deg)
