I know it is durum wheat but is that different to the wheat I know containing gluten. Is it simply classed under the heading of what nutritionally? I.E if someone was allergic to wheat, is it the same thing for couscous.

Yes, couscous has gluten in it.

traditional couscous is made from semolina, here in the US it's primarily made w/ plain flour, In the Middle East there are many couscous preperations made from barley, millet, sorghum and other grains, if you shop the internet you'll probably be able to find these wheat free products. Good luck!

If someone is allergic to wheat, then they'll have a problem with couscous. It is simply wheat and water; it's classified as pasta.
