Orange Granita
6 oranges
4 cups freshly squeezed orange juice
Sugar, to taste
3 sprigs basil
2 tablespoons orange-flavored liqueur (recommended: Grand Marnier)
Clean and wash the oranges. Cut off the top 1/4 of the oranges and shave a small slice off the bottom so it stands easily.
Using a grapefruit knife, cut out the flesh of the oranges and place in a strainer set over a bowl. Be careful not to cut through the bottom. Stand the oranges on a cookie sheet and place in the freezer and freeze until solid.
Press the flesh of the oranges through the strainer to extract all of the juice. You should end up with about 1 1/2 to 1 3/4 cups of orange juice. Add the extra 4 cups orange juice. Stir in sugar, a tablespoon at a time, until the mixture is of desired sweetness. Add the basil and orange-flavored liqueur and let sit for 15 minutes.
Strain the mixture into a roasting pan or baking dish. The dish should be large enough so the liquid is not more than 1-inch deep. Freeze the mixture for 1 hour. Remove from the freezer and scrape with 2 forks to break up ice. Return to the freezer and freeze until solid, about 2 to 3 hours, scraping with forks every hour or so.
When the granite is frozen, scoop it into the orange shells and serve immediately.

Grilled Asian Orange Chicken
Makes 4 servings
Ingredients:
1/4 cup Smucker's orange marmalade
2 tablespoons Crisco Pure Canola Oil
2 tablespoons soy sauce
2 tablespoons lime juice
1 tablespoon finely grated fresh ginger
CRISCO No-Stick Cooking Spray
4 skinless, boneless chicken breasts
Preparation:
Remove the cooking rack and heat the grill to medium high. Combine the marmalade, Crisco Pure Canola Oil, soy sauce, lime juice, and ginger in a bowl and mix well.
Spray the cooking rack with Crisco Cooking Spray and place on the grill. Place the chicken breasts on the grill and brush with half of the orange sauce. Cook about 5 to 6 minutes. Turn and brush with the remaining orange sauce and cook another 5 to 6 minutes until done. Enjoy!

12 Walnuts

Chicken Sevilla
Take large chicken fillets (1 per person) and coat with seasoned plain flour.
Pan fry with a little olive oil until golden on both sides.
Add finely chopped onion and garlic cloves and stir.
Add strips of red pepper.
Grate the peel of a whole orange and add
Put in a cup of orange juice and half a cup of sherry.
Simmer for twenty minutes.
Finally and before serving add in orange segments -peeled and with all the pith removed and add a little cream.Stir and serve with saute potatoes and veg or green salad of choice.
This is an adaptation of a Spanish recipe.

Orange juice is the most 'scrumptious' thing to make with oranges.
But, if that is not your thing, use freshly peeled oranges and segments with pudding, rice pudding, tapioca, yogurt, etc.....wonderful (add a cookie on the side!!)

juice the oranges then soak chicken breasts in them until browned. pour the extra orange juice on the chicken and voila- orange chicken! yum my fave
