I assumed it was corn but am I worng?

Corn flour is from corn. Its corn soaked in lime water, and then they remove the hull and grind it up, with a few more steps inbetween. Check out the process at www.gourmetsleuth.com.

Corn flour can be made from ground maze corn and the other is made from ground wheat starch called wheaten corn flour.

If allergic to gluten then you can not have wheaten corn flour.

Your right! It's from corn. Masa used in tamales is the best example I can think of for it's use. What are you fixing?
