I was looking at a katakana table in Japanese and I thought I'd have a go at spelling my name (Gareth), but there doesn't seem to be a symbol for the 'ga' syllable. So what would I use instead?

Although ガレス (ga-re-su) may be what you're looking for--Japanese has no 'th' sound and does not allow words to end in consonants other than 'n'--I wonder how you pronounce your name. In Japanese, ガ is pronounced like the first two letters in the English word 'god'. On the other hand, if the first syllable of your name is like in the name 'Gary', I suggest you use ゲ. Thus, your name would be ゲレス.

I guess you were looking at a basic Katakana chart (アイウエオ、カキクケコ etc..) which shows all Katakana alphabets. Those alphabets is also called Gojuon or Seion in phonologic in Japanese language.

'ga' is ガ (カ + ゛(dakuten)) in Katakana, but its sound belong to Dakuon in phonologic. you can find ga (ガ) in Katakana(Dakuon) chart of the following reference;
