I tried to find the meaning of "buttonage" in a wine dictionary. But I can't find it. Do you know the meaning?

Do you know the chinese translation of "buttonage"? Thanks in advance.

I think you mean 'batonnage'.

This is the French term for stirring lees (dead yeast cells & sediment) in a barrel of wine aftrefrementation has finished in order to intensify lees contact and adjust final wine flavor & color, also to reduce risk of hydrogen sulfide.

I have no idea the word in Chinese, but since the rest of the wine world use French winemaking terms, then maybe so will the Chinese. Otherwise I suppose if there is a character for 'stirring with a stick' sould do. :)
