Try layering leeks with sliced potato and bacon, covering with milk, dot with butter (or spread), season to taste and bake in the oven, Mark 4-5 until soft and brown on the top. Check that potatoes are cooked through - this will vary depending on the variety.

Liver....fry the liver for about 30 secs either side - remove from pan and and then cut into as thin a slice as you can ( frying it first helps) - put the thin slices back in the pan and fry - but not too long. Put chopped leeks into the pan and place liver on the top of these so they will steem. When all done pour over a tin of oxtail soup.....mmmmm.

This isn't 'instead of onions' but leeks baked in cheese sauce makes a very tasty alternative to cauliflower cheese - especially if you don't like cauliflower! I often do this with a roast chicken dinner.

using leeks in stead of onions is alot better try onion gravy then use them in all meals where you would use onion.
2 Tbsp. olive oil
4 large leeks, cut into 1/4-inch thick slices (about 2 lb.)
4 large russet potatoes, peeled, cubed (about 4 cups)
1-1/4 qt. (5 cups) water
1 tsp. salt
1/2 tsp. black pepper
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, cubed
1/2 cup milk
1/4 cup chopped fresh chives
HEAT oil in large stockpot on medium heat. Add leeks; cook 5 minutes or until tender, stirring occasionally. Add potatoes, water, salt and pepper; stir. Cover. Bring to boil. Reduce heat to medium-low; simmer 15 to 20 minutes or until potatoes are tender. Cool 10 minutes.
ADD leek mixture, in batches, to blender container; cover. Blend until pureed. Return to stockpot.
WHISK in cream cheese, a few cubes at a time; cook on medium heat until cream cheese is completely melted, stirring constantly. Add milk; cook until heated through, stirring occasionally. Sprinkle with chives just before serving.
leek salad
½ cup olive oil
1 Tbs balsamic vinegar
1 shallot, minced
1 Tbs fresh basil, chopped
½ tsp salt
¼ tsp white pepper
8 medium leeks
1 Tbs parsley, chopped
slivers of Parmesan cheese
Directions
Mix together the olive oil, vinegar, shallot, basil, salt, and white pepper.
Heat a pot of water to boiling over high heat.
Trim the root ends of the leeks. Cut the leeks into 5” pieces.
Drop the leek pieces into the water and cook for 3 minutes.
Remove the leeks and drain well.
Place leeks in a shallow dish and over with the dressing mixed together in step 1.
Refrigerate until well chilled (at least 1 hour).
Before serving sprinkle with parsley and slivers of Parmesan cheese.
Note: This salad dressing is a good basic recipe that goes well with many types of greens.

Cheese and Leek pie or quiche is lovely, and the quiche is so easy to make, even if you make the pastry yourself and can be served with salad, or potato wedges, or chips and beans for the kids.

all can be adapted - leeks are from the onion family - i make stew with them
