I hear that learning about cheese is a lifetime expedition.

Oh, yeah, because there are zillions of types of cheeses, and learning what goes with what takes a lot of time and delightful experimentation. (-: And of course, a bad cheese can kill you, or make you wish you were dead. It's quite an adventure really.

But maybe you can start with one kind of cheese, and explore the different nuances -- a Danish feta is a lot different than a Greek feta, and the milk used can be different, too (sheep, goat, cow). And the things they do to a feta -- brine it, oil it, toss it in a salad -- feta will keep you occupied for awhile. Have fun!
