The easiest way I can think of is to create a .pdf document from the scan, open it in Acrobat Reader, and use the text select tool. Select all the text you want, copy it, and then paste it into Word. If you are wondering how to create a .pdf document, go here: http://www.pdf995.com/download.html

Dear friend,
It depends upon the model you use. I have HP scan where I can choose the option for a scan "editable text", and destination as "MS Word", then it will be scanned to the MS Word where I can edit. It is very useful and saves much time. All the best.

if your scanner have no scan to ext function,

u can buy a ocr software and it will turn scan image to text format.

then u can open it and edit.
