Carbon dating only tells the date of the paper, papyrus etc. Sometimes the date can be determined by where things were found and when.

As modern years go by, you see how lingo changes as well as how things are written or what things are written on... handwritten, typewriters, computers, etc. Common language changes as well as academic language changes.

Well, in the Greek and Hebrew manuscripts, they can identify that as well. Depending on the inks used, if it were written on vellum (and what kind) or papyrus... the common characters used in certain eras, etc. All these could be dated because we have so much evidence from the ancient worlds today with archaeologist identifying new finds all the time- secular and nonsecular alike!

Some people go off of historical content; they look for "current events" recorded in the Bible and compare them to evidence for these events actually occuring. Then they make predictions about the time of the writings based on the time of these "current events". Does that help?

Several methods are used, but carbon-dating doesn't get close enough. Usually its contents are compared with other documents and events of the time. Here is a good article.
