As a former Deli Clerk, we would slice and keep in case no more then seven days. Usually the case is that it wouldn't last that long in our deli case.
When you take it home hams may look sort of gray but that's because of the fluorescent lights. I suggest having your deli cut it to order, usually requires you to get it cut thinner or thicker. You can also trust your nose if it has a foul odor then toss it and also if its slimy. When in doubt toss it!! Also remove all those stupid waxed sheets, usually don't help. Just stick to zip lock baggies. Good Luck.

On the bags they suggest only two days, but properly stored in the refrigerator I would say 4-5 days is safe. But it depends on the type of meat it is.

Generally, if the food becomes an odd colour, slimy or whatever it should be wrapped and discarded.

i would say about a week.. but if u want a more precise time frame, then talk to the deli people.
