A crazy good use for ginger is in a steak marinade. Grate up some ginger (about 1/2"), mince a few cloves of garlic and stir it all into about 1/2 cup of soy sauce. Poor that over a few nice steaks and let set (at least an hour) then throw those babies on the grill...thank me later.

Ginger Beef
3 inches peeled and grated fresh ginger, 2 garlic cloves minced,
2 T vege oil , 1 &1/4 c soy or tamari (Found in asian section)
1 t sesame oil, 1# sirloin steak, slightly frozen, cut into thin strips
Marinate steak over night in above ingredients. Place on skewers and grill or broil until desired doneness. Bring marinade to a boil and serve with steaks. Sometimes to kick it up, I will also add 1 minced jalapeno or serrano and some chopped cilantro. This gives it a thai quality.Use tamari instead of soy if you can find it.

ginger is a root. it has a thin layer of skin covering the fibrous strong scented internal edible flesh. I'm a chef by trade, and i say the nose knows. Snap your "branch" and smell it. Ginger gives itself away every time. Then taste it by touching it to your tounge. It should burn slightly, kind of like chilli but with that distinctly ginger overtone. Indonisian dishes employ the use of ginger heavily, Nasi Goreng is a rice dish I like to serve at any time, although in indo it's served for breakfast. The ginger is in the sauce, (it is in the sauce that you will find most uses for ginger). Try incorporating ginger into your diet by using it instead of garlic in your everyday dishes. Finely diced, always finely diced. think cookies, cakes, anything sweet. And as for savory, go indo and asian. Just don't mix it with processed dairy products. It is good for sinuses and the prevention of travel sickness, colds and flu's.

You can peel it (the best way is scraping the outer brown skin off with a spoon) slice it crosswise into quarter or eighth inch slices and simmer it in about a cup of water and half a cup of sugar for 20 minutes or so.
Pour off the liquid and let it cool and you have a ginger syrup that can be mixed with lime, a splash of soda water and vodka for a great cocktail.
Then you can take the simmered ginger slices and dredge them in sugar and let them cool and dry on a paper towel or a baking rack and you have ginger candy.

You could grate it and mix with minced garlic etc and soya sauce or something similar to make a marinade for meat or chicken.
You could slice it thinly with other ingredients to make a Chinese stir-fry.
You could, if you have indigestion, nausea, morning sickness etc., grate it and make an infusion in hot water for several minutes, drain and add sugar or honey to taste and drink it down to ease these complaints.
It also goes well with honey and lemon.
I ope you can find this some help.
I am told by Chinese and Japanese friends that it is not necessary to peel fresh ginger.
