well, just like any other fruits bananas when ripe are yellow is because a substance in the tree contains some acids which will cause some physical reaction to the fruit that's why it change color when it's ripe already.

They start of green and rather unpalatable. Ripening causes sugars and starches to develop and therefore change colour.

Why does a strawberry change from green to red? Same principle.
