Spicy Pizza Sauce
This makes a chunky sauce; if you prefer a smoother consistency, you can puree the sauce in a food processor with one tablespoon water. Make-ahead tip: Prepare the sauce a day or two ahead and refrigerate it, or make a double batch and freeze the extra for up to one month.
Cooking spray
1/4 cup finely chopped onion
1 garlic clove, minced
1/4 cup white wine
2 tablespoons tomato paste
1 teaspoon dried oregano
1/2 teaspoon crushed red pepper
1/8 teaspoon freshly ground black pepper
1 (14.5-ounce) can crushed tomatoes, undrained
1/2 teaspoon balsamic vinegar
Heat a large saucepan over medium-high heat. Coat pan with cooking spray. Add onion to pan; sauté 3 minutes or until tender. Add garlic to pan; sauté 30 seconds. Stir in wine; cook 30 seconds. Add tomato paste, oregano, crushed red pepper, black pepper, and tomatoes. Reduce heat, and simmer for 20 minutes or until thick. Remove from heat; stir in vinegar. Cool.
You could do this one or just add the crushed red pepper flakes and black pepper to your regular sauce.

California Pizza Kitchen has some pretty amazing/unusual flavors:

Tomato Vodka Cream Sauce
Ingredients:
1/4 pound (1 stick) butter
1/2 teaspoon red pepper flakes
1/2 cup vodka
1 can Italian crushed tomatoes
3/4 cup Parmesan cheese
1/2 cup Romano cheese
1 cup heavy cream
Pasta, prepared according to package directions
Instructions:
Melt butter over high heat until bubbly. Add red pepper flakes.
Rapidly add vodka. Simmer for 2 minutes. (The alcohol burns off but makes tomatoes "come alive". Simmer tomatoes with the two cheeses for three minutes, then add 1 cup of heavy cream and simmer for one minute.

A quick and simple way to spice up a can or bottle of pizza sauce is to add fresh oregano, basil, crushed chili peppers, some ground chilli powder and tumeric. That's what I put in my sauces and it gives it a nice new twist. Note that there is no measurement, it's all according to one's taste. If you want more info IM me.

Why not ask your customers? They are in a good position to advise you.
Or, even better, ask your former customers. They would be in the best position to tell you what your pizza needs to be more palatable.
Have you checked with your association? Certainly they have experts who can guide you better than a random web site.
