Try Audacity. It's a good free audo recording and editing software.

Audacity is a free recording program. (no time limit and you can save as MP3)

Sound Recorder is on every pc running Windows but it will only record for 1 minute and you can only save as a WAV file.

windows sound recorder is the easiet option available u can find it in Start>all program>accessories>entertainment>sound recorder...
click record button and then save the file

If you want professional quality. Get Pro Tools. You can install it on a laptop and or PC, hook it up to a compatible soundcard/audio inteface via USB or Firewire and be good to go.
