I just bought a whole bunch of fresh spinach from an organic market. I really don't think I can eat it for the next couple of days (i just needed some for a recipe). Can I pluck them from the stems, put it in a ziploc bag and freeze it? will it still be good for future use?

Sure you can freeze spinach. Just wash it well and drain it. Put it in a sealed container-plastic zip loc works well and roll tightly before sealing to remove air. Cook in boiling water right out of the freezer- don't thaw first.

It doesn't. Cooked down...1 large bag (2 small bags) of fresh should give you probably a little more or less than one of those frozen boxes. The added bonus is that it is much more tender. For some reason (I have noticed) frozen spinach seems really stringy and tough to me.

Trim it and blanch it first. Then just thaw and squeeze out the extra liquid before using again. But of course, it won't be anything like fresh spinach. Use it for dips or something like that.

It will not tolerate freezing, but it can be canned (fresh is so much better, but canning is about the only way you would be able to keep it any length of time).

No, this will kill the structure in the leaves or to be more specific, the cellulose and the vitamins.. Just like you cant really freeze salad, same idea
