You can take a short trip with little or no training, other than what the church or institution will provide. You can be an aid to the doctor and do simple tasks. If you have a medical background, say you are an RN or a doctor, you can do more extensive work. If you want to be a full time missionary, you will probably need cross-cultural and theological training, often in seminary. But this depends on the denomination or group that sponsors you.
