My lab-boxer is a year old (90 lbs) and in the last few months has taken to nursing. She will sit with a stuffed animal and suckle on it for hours. She evens kneads while doing it.

As far as I know she wasn't taken from her mom too early, she is fixed (was fixed by the City pound at 4 months - of which we had no control of, we adopted her after that!) and never displayed this behavior until after she'd hit a year old.

Can anyone offer advice as to why she may be doing it? Is this a healthy behavior, is it okay to let her continue or should we stop it?

That sounds normal. Even a spayed female can display motherly emotions. I bet she'd love a pup around to mother and raise for you. And it could just be a "comfort" thing. I would ignore it. Some spayed females will "hump" their stuffed animals, especially the small breeds. Who knows?
