~~~~~ Simmered Tomato and Basil Chicken ~~~~~
Serving: 4
1 tbsp olive oil
1 onion, sliced
2 cloves garlic, sliced
4 chicken breast fillets
15 fluid ounces tomato puree
2 fluid ounces white wine
1 tsp sugar
1/2 cup roughly chopped basil leaves
1/2 cup black olives
Shaved Parmesan cheese to serve
Heat the oil in a frying pan over high heat. Add the onion and garlic and cook for 2 minutes or until soft. Add the chicken and cook for 2 minutes each side or until well browned. Add the tomato puree, wine and sugar and simmer over medium heat for 8 minutes or until the chicken is cooked through. Stir through the basil and olives. To serve, place the chicken on plates and top with the pan sauce. Serve with steamed greens and the shaved Parmesan.

Serve these with a refreshing green salad as dinner, or slice into smaller triangles as an appetizer.
Serving: 4 / Prep: 10 mins
Total Time: 30 minutes
2 tbsp. chicken broth
1/4 cup chopped onion
1 small clove garlic minced
1/4 cup chopped bell pepper
2 chili peppers, minced
3 plum tomatoes, chopped
vegetable cooking spray
8 flour tortillas
1 cup reduced fat Cheddar cheese, shredded
1 1/2 cups cooked chicken
Garnish: salsa and fat-free sour cream
In a medium heavy skillet, saute the onions, garlic and peppers in the chicken broth until soft. Add the chili peppers and tomatoes, and simmer for a few minutes more until the liquid has evaporated. Add the chicken and stir well to combine.
Spray a cold skillet with the nonstick spray, and heat over medium heat. Place a tortilla in the pan and sprinkle with 1/8 cup of the cheese. Add about a quarter of the chicken mixture and top with another 1/8 cup of cheese. Cover with another tortilla and cook for 2-3 minutes or until brown.
Flip the quesadilla over and cook for an additional 2 minutes. Remove from the heat and cut into wedges. Keep the quesadilla warm while frying the remaining quesadillas in the same manner. Serve with salsa and fat-free sour cream.

I make a dish at my work that I call Chicken Arrubata.
The sauce is diced tomato, sugar, garlic, parsley, tomato juice, a dash of olive oil, basil, oregano and a little parmesan cheese. Mix the whole sauce cold and then place in a pan. Cook the chicken with the sauce and the chicken should take on a tomato flavor. I have the exact recipe if you need it. But when I get finished making the chicken and Arrubatta sauce I serve it over a bed of rice with the sauce and some fresh grated parmesan. Let me know.

Saute 1 chopped onion, 2 cloves minced garlic in a couple tablespoons olive oil for about 3-5 minutes. Add boneless chicken breasts, salt & pepper, brown on both sides. Add a can of chopped tomatoes or stewed tomatoes or even salsa. Cook about 15 - 20 minutes till chicken is done. Make rice on the side and serve. Season to taste. You may want to look in mexican or spanish foods when you search next time.

What about mexican style? You brown some chicken breasts or thighs chicken in a can of Rotel tomato sauce. It comes with flavorful chilis already in it-or add your own a little can of Ortega green diced green chilis. Cook the rice in with it all...add about 3/4 cup of chicken broth and a cup of rice, simmer covered for about 25 minutes on low. Check the temp of the chicken-you want it to be 145 degrees.
Or jambalaya, it has chicken, spicy sausages, shrimp and rice in a tomato base. You can leave out the sausages and shrimp if that's not your thing.
You can always substitute pasta for rice-I have a friend who makes chicken cacciatore with rice and its really good.

I cook boneless, skinless chicken breast cut into thin strips in italian dressing, i pan fry it in a small amount of dressing to brown it on both sides, then i simmer it with about 2 cups of italian dressing and one small can of diced tomato's, and one cup of tomato sauce for about an hour, or until done, I serve this over rice, I dont really have a recipe, it is just something I threw together, and it was very good. I also serve it with a italian bread, lightly buttered. I have also cooked the chicken in a good chunky vegtable spaghetti sauce and served it with rice.

Take chicken breasts or cutlets, layer them in a baking dish. Pour in 1-2 cans of petite diced tomatoes. If you have some fresh basil, that will really enhance the flavor. Bake at 350 for about 30-45 minutes. Try adding a thin layer of mozzarella (fresh, if you have it) when it's almost done cooking, leaving it in just long enough to melt. Serve over rice.

Oregano Stewed Chicken
4 boneless skinless chicken breasts
1 medium onion, finely chopped
2 cloves garlic, minced
1/2 cup chicken stock or broth
2 (14.5 ounce) cans stewed tomatoes
2 tablespoons tomato paste
2 teaspoons white granulated sugar
1 1/2 cups white button mushrooms, chopped
2 teaspoons dried oregano
1 teaspoon dried basil
3 tablespoons vegetable or olive oil
Black pepper to taste
1. Heat oil in a large skillet over medium heat and brown chicken (about 5 minutes each side); remove chicken and set aside.
2. Add onion, garlic and chicken stock to skillet and cook for five minutes.
3. Add chicken, tomatoes, tomato paste, sugar, mushrooms, oregano and basil to skillet.
4. Reduce heat to medium-low; cover and let simmer for 1 hour.
5. Uncover and let simmer for another 15 minutes.
6. Serve over bed of steamed brown or white rice.
7. Sprinkle top lightly with black pepper.

Chicken Parmesan with rice
(its realy good, my wifes favorite)
ingredients:
4 boneless chicken breasts, pounded to 1/2 inch thickness
1 egg
1/2 cup milk
seasoned bread crumbs
8 slices mozzarella cheese, or more
1 jar (16 oz) spaghetti sauce
Parmesan cheese
PREPARATION:
Whisk together the egg and milk. Dip the chicken breasts in milk and egg mixture and then in bread crumbs. In a skillet with a little olive oil over medium-high heat, brown on both sides until golden. Set chicken in a baking dish.
Slice 8 pieces of mozzarella cheese and put two on each chicken breast. Pour 1 jar of your favorite spaghetti sauce over all. Sprinkle with Parmesan cheese and a little more mozzarella and bake at 350° for about 25 to 30 minutes, or until bubbly. Serve on top of a bed of rice!

Should take about 30 minutes. Remember you are cooking with cast iron. The cast iron dish keeps cooking the dish for a while after you remove. Make sure you use something so it doesn't stick, especially since you are using tomatoes, which have a high sugar content and burn fast.(Pam?) I would let this dish set for 10-15 minutes before serving due to heat. If you are serving each person with a cast iron dish, make sure you have something to absorb the heat so it doesn't ruin your table.
