Here is the version I make.

Easy Peanut Butter Cookies

1 c peanut butter (smooth or crunchy)
1 egg
1tsp vanilla
1 c sugar (I use brown sugar, but "plain" sugar works great too)

Mix all ingredients and roll into walnut-sized balls. Place onto a greased cookie sheet and bake in a preheated oven at 350° for 1-12 min. Be careful not to over bake-- they burn easily. Let the cookies cool a bit before removing them from the pan.

** Choclate chips or M&M's are good additions too, for variety.

Peanut Butter No-Bake Cookies

1 cup sugar
1 cup Light Karo syrup
2 cups peanut butter
small box of Total Whole Grain cereal +/-

In a very large pan, bring sugar and syrup to a simmer and stir to make sure it is all dissolved and hot.
Turn off the heat, and add the peanut butter and stir it in till its creamy and all dissolved.
Add cereal and stir till its all well coated.

Drop by spoonfuls on wax paper.

Store in a sealed container.

You can also use nutty peanut butter... and/or a cereal that has nuts or your favorite fruit. Judge for yourself how much dry ingredients will work with the syrup to be well coated.
Note: Be sure the cereal has large sturdy flakes. Those with smaller or the type that gets limp as soon as the milk hits it doesn't really work. Thats hot syrup! It needs a firm flake.
