I've done quite a few indoor applications, both residential and commercial. The key thing above the wall and ceiling material is to have a dehumidifier.
We've had everything from painted CMU (concrete cinder blocks), pressure treated T111 sealed and some painted, 116 Vgroove 1"X6" tongue and groove sealed in both cedar and pine, non water absorbent sheet rock, and aluminum block paneling. All worked well.
I'd suggest determining your budget and/or your taste and then seeing which material is either the best compromise for what you care to spend or if it's just what you want period when cost isn't really an issue.
