I was watching Emeril and he was using eggs as part of a sauce, so he dropped the hard eggs in hot water for about 30 sec. He said this kills the bacteria. Then he cracked it open and mixed it into the sauce. Is this safe?

What about eggnog? doesnt it use raw eggs?

I think so. Emeril generally knows what he's talking about. Plus, it's very rare that you get salmonilla from eggs. How often did you eat raw cookie batter as a kid?

Fear not and cook Emeril's food to your heart's content!

Yeah, he killed the bacteria outside of the egg shell, as long as the egg has been kept cold most of the time, bacteria won't grow inside. The yolk is what really goes bad with the egg, since it's just saturated fat. But besides that, its pretty safe to eat that egg that emeril cooked.

if i emeril did what i think he did, that's called coddling an egg? i'm not quite sure.

anyway, that's definitely safer than using a raw egg, but i think there's still a risk. if you really need to do that (and i think that things taste better if you do), just make sure you get the best quality eggs.

I've read that heating raw eggs for 30-60 seconds in hot water will kill the bacteria. But, I've never tried it!

I think it would be pretty safe to eat. As long as an egg is fresh, has been kept cold, and has no cracks, then the chances of getting sick are very slim.

Raw eggs are safe. In Japan, we eating raw eggs and rice mixed together a lot and we never get sick. Also, we dip grilled meats into raw eggs and don't get sick.

If the eggs are pasteurized, they are safe to eat raw (i.e. for homemade mayonnaise, hollaindaise sauce, etc.). Pasteurization kills salmonella. Check the label and see if they are pasteurized or ask someone to be sure.

yes it is ok it is called tempering eggs..it cooks the eggs without making them scrambled...its very common in pastry and sauces..creme brulee would be an example or hollandaise sauce or bearnaise
