It'd be best to politely let him down. Maybe tell him you think he's a really nice (or another word choice), but you just don't feel anything for him in that way.
If he doesn't know you that well you could tell him you have a boyfriend. Or if you don't think he's going to take no for an answer and he knows you don't have a boyfriend you could always tell him you're a lesbian. May seem extreme, but if it'll make him go away...
Overall it'd be best to let him down gently though. I probably wouldn't tell him that you don't want to date right now at all, b/c if you do find a guy that you want to date and start dating he's gonna notice and know you lied to him.

Well, you can politely tell him that you are not interesting in dating right now, but thank you for the invitation.
OR, you could try going on one date with him. If it's a terrible date, tell him you don't think this is going to work out but you were willing to give it a try. This way he will at least feel like you were kind enough to make the attempt.

Simply tell him you're not interested. Don't get his hopes up with one date, that's not fair if you already know you really don't like him.
