I'm having a party with some friends and wanted to know if there are any good, easy recipes for fortune cookies. Any suggestions? thanks!!

Fortune Cookie Recipe

Fortune cookies can be tricky to make - it's important to make sure that the cookie batter is spread out evenly on the baking sheet. Instead of using the back of a wooden spoon to spread the batter, it's better to gently tilt the baking sheet back and forth as needed. Wearing cotton gloves makes it easier to handle and shape the hot cookies. This fortune cookie recipe makes about 10 cookies.
INGREDIENTS:
2 large egg whites
1/2 teaspoon pure vanilla extract
1/2 teaspoon pure almond extract
3 tablespoons vegetable oil
8 tablespoons all-purpose flour
1 1/2 teaspoons cornstarch
1/4 teaspoon salt
8 tablespoons granulated sugar
3 teaspoons water
PREPARATION:
1. Write fortunes on pieces of paper that are 3 1/2 inches long and 1/2 inch wide. Preheat oven to 300 degrees Fahrenheit. Grease 2 9-X-13 inch baking sheets.

2. In a medium bowl, lightly beat the egg white, vanilla extract, almond extract and vegetable oil until frothy, but not stiff.

3.Sift the flour, cornstarch, salt and sugar into a separate bowl. Stir the water into the flour mixture.

4. Add the flour into the egg white mixture and stir until you have a smooth batter. The batter should not be runny, but should drop easily off a wooden spoon.

5. Place level tablespoons of batter onto the cookie sheet, spacing them at least 3 inches apart. Gently tilt the baking sheet back and forth and from side to side so that each tablespoon of batter forms into a circle 4 inches in diameter.

6. Bake until the outer 1/2-inch of each cookie turns golden brown and they are easy to remove from the baking sheet with a spatula (14 - 15 minutes).

7. Working quickly, remove the cookie with a spatula and flip it over in your hand. Place a fortune in the middle of a cookie. To form the fortune cookie shape, fold the cookie in half, then gently pull the edges downward over the rim of a glass, wooden spoon or the edge of a muffin tin. Place the finished cookie in the cup of the muffin tin so that it keeps its shape. Continue with the rest of the cookies.

Fortune Cookies

2 large egg whites
1/3 cup sugar
4 tablespoons melted butter, cooled
1/2 cup flour
1/4 teaspoon salt
1/2 teaspoon almond extract
1/2 teaspoon lemon extract

You will also need: 2 1/2 x 1/2-inch fortune strips.
Preheat oven to 350°F.
Grease a cookie sheet thoroughly.
Whip the egg whites on low speed until light and foamy.
Blend in the sugar and continue to beat until soft peaks form.
Pour in the melted butter, flour, salt, and extracts; mix until well combined.
Drop a tablespoon of the batter onto the prepared cookie sheet.
Using the back of a spoon, spread the batter evenly into very thin 3-inch rounds.
Alternatively, use the lid of a jar with a 3-inch circle punched out as a template, pour the batter in the ring, and remove.
Because you must work quickly to shape these cookies, bake just 3 at a time.
Bake for about 5-8 minutes or until the edges are a light golden color.
Remove the cookies with a spatula and place on a work surface.
Lay a fortune in the lower middle of the cookie, and fold in half to make a semi-circle.
Bend the edges up toward each other to make a crescent.
Drag the crease across the rim of a small measuring cup, with the ends facing down.
Cool in mini muffin tins to hold shape until crisp.
Repeat with remaining batter.

Chinese Fortune Cookies Recipe

Ready in: < 30 minutes
Difficulty: 3 (1=easiest :: hardest=5)
Serves/Makes: 20

Ingredients:
2 Eggs
1/2 cup Powdered Sugar
4 tablespoons Water
1/2 teaspoon Almond Flavoring
1 cup Cake Flour -- sifted

Directions:

Butter a baking sheet and dust it lightly with flour. Heat oven to 350. Beat eggs and gradually mix in sugar while beating until mixture is very thick. Beat water in a tablespoon at a time. Add and beat in the almond flavoring, preferably with an electric mixer, as it must be thorough. Very gently fold in the flour to mix, but do not beat.

Drop the batter by level tablespoonfuls on the buttered sheet 5 inches apart. Bake until very lightly browned. Remove from oven and shape while still quite warm, inserting fortunes. Let cool in glasses to hold the form.

Chocolate Dipped Fortune Cookies

Dress up purchased fortune cookies for a little treat with your next Asian-themed meal. I haven't tried it, but white chocolate would be an alternative, if you desire. Cook time is approximate time for chocolate to cool.

1 dozen fortune cookies
1/2 cup semi-sweet chocolate chips (or white chocolate, if desired)
1 tablespoon shortening

DIRECTIONS

In a small bowl, melt chocolate chips in the microwave in 30-second intervals, stirring in between.
Add shortening; stir until blended.
Dip the purchased fortune cookies half-way in the chocolate and place on waxed paper to cool.
