First of all- none of the hotels in So. Cal have waterslides- they are very behind the times with family lodging. Secondly, it's too cold there anyway- So. Cal winter temperatures are pretty much equivalent to Northern Georgia or South Carolina. You might hit a great day, or a chilly rainy day. If you want the type of vaca spot you are asking for, try Phoenix AZ, or, of course, Florida. Good luck!

I am on the Central Coast (Santa Barabara and up through Avila Beach) the water is cold but it is warm on the beach most days. Not sun bathing warm but fun for beach volleyball, looking for shells, and building castles. We don't have any hotels with water slides but there are great resort hotels near the ocean. With an 11 year old I would look into staying near the ocean and looking into kayak or boogie board rentals (plus wetsuits).

It's kind of cold here in California to even be going in the water.
