I'm tired of the same old stuff. Any good ideas?

Try a Honey Nut stir fry with ginger. It is sweet, crunchy, and YUMMy!

1 tablespoon cornstarch
3/4 cup orange juice
1/4 cup honey
3 tablespoons reduced-sodium soy sauce
1/4 teaspoon ground ginger
2 cups sliced celery
1 1/2 cups sliced carrots
4 teaspoons canola oil, divided
1 pound boneless, skinless chicken breasts, cut in 1/2-inch strips
1/4 cup coarsely chopped peanuts
Hot cooked rice

In a small bowl, combine the first five ingredients until smooth; set aside. In a nonstick skillet or wok, stir-fry celery and carrots in 2 teaspoons oil until crisp-tender. Remove and keep warm. In the same skillet, stir-fry chicken in remaining oil until no longer pink.
Return vegetables to the pan. Stir orange juice mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Sprinkle with nuts. Serve over rice if desired.

I am actually cooking this tonight for dinner.

Take a whole chicken, clean it inside out.
Prepare rice, now I don't know how you prepare your rice, but it is usually good to boil it in some water, like macaroni.
After draining the rice, let it cool.
In a cooking pot, put half a stick of butter, and diced onions, let the onions turn yellow, add red and black pepper for seasoning, give a good stir and dump the rice in, mix it well, so that the rice is good and red. By the way, dice a whole onion. It brings out the taste. Then after the rice is done, stuff it in the chicken. Heat the oven to 350 degrees, cover stuffed chicken with aluminum foil and put in oven. After about two hours, check to see if the chicken has cooked, if yes than open up the foil and put the chicken back in the oven, let it turn red for twenty minutes and take it out.

40 clove chicken

1 whole chicken (broiler/fryer) cut into 8 pieces
1/2 cup plus 2 tablespoons olive oil
10 sprigs fresh thyme
40 peeled cloves garlic
Salt and pepper

Preheat oven to 350 degrees F.

Season chicken with salt and pepper. Toss with a 2 tablespoons olive oil and brown on both sides in a wide fry pan or skillet over high heat. Remove from heat, add oil, thyme, and garlic cloves. Cover and bake for 1 1/2 hours.

Remove chicken from the oven, let rest for 5 to 10 minutes, carve, and serve.

The garlic turns all soft an buttery and you can smear it on some buttered bread for THE BEST garlic bread ever. (Roasted garlic is also sweet)

We had this last night...its very yummy & everything cooks in one pan, try it, my husband goes nuts over it, try it, I know you'll like it!

Chicken rice bake
1 box chicken flavor rice a roni
4 boneless skinless chicken breasts
2 cups frozen broccoli
1 6 oz. package fresh mushrooms quartered
1 cup mozzarella cheese

In a large skillet, pour in rice a roni, seasoning packet, and 2 1/2 cups of water, mix. Place in 4 boneless, skinless chicken breasts, add mushrooms, frozen broccoli, cover cook until all the water is gone, turn off heat, sprinkle cheese on top of the dinner place lid back on for 1 minute, while cheese melts. Serves 4

Have you tried butterfly-cutting the leg and thigh, debone in the process, pan-fry with garlic and black pepper to crisp the outside, and then baked in the oven-safe pan?

Take the juices after baking and stir fry more vegetables like carrots and broccoli, add 1/4 to 1/2 cup water, cover and steam using low heat for 5 minutes. You are trying to soften the veggies, not wilt them.

Recombine in your plate, sprinkle on some worecestershire sauce (Lea&Perin). Enjoy

Cottage Cheese Chicken Enchiladas
Prep Time: 30 Minutes
Cook Time: 30 Minutes Ready In: 1 Hour
Yields: 6 servings
"Cottage cheese lends a lighter texture to chicken and cheese enchiladas, bathed in classic red enchilada sauce."
INGREDIENTS:
1 tablespoon vegetable oil
2 skinless, boneless chicken breast halves - boiled and shredded
1/2 cup chopped onion
1 (7 ounce) can chopped green chile peppers
1 (1 ounce) package taco seasoning mix
1/2 cup sour cream
2 cups cottage cheese
1 teaspoon salt
1 pinch ground black pepper
12 (6 inch) corn tortillas
2 cups shredded Monterey Jack cheese
1 (10 ounce) can red enchilada sauce

DIRECTIONS:
1. To Make Meat Mixture: Heat oil in medium skillet over medium high heat. Add chicken, onion and green chile peppers and saute until browned, then add taco seasoning and prepare meat mixture according to package directions.
2. To Make Cheese Mixture: In a medium bowl mix sour cream with cottage cheese and season with salt and pepper; stir until well blended.
3. Preheat oven to 350 degrees F (175 degrees C).
4. To Assemble Enchiladas: Heat tortillas until soft. In each tortilla place a spoonful of meat mixture, a spoonful of cheese mixture and a bit of shredded cheese. Roll tortillas and place in a lightly greased 9x13 inch baking dish. Top with any remaining meat and cheese mixture, enchilada sauce and remaining shredded cheese.
5. Bake at 350 degrees F (175 degrees C) for 30 minutes or until cheese is melted and bubblybathed in classic red enchilada sauce."

Boneless skinless chicken, with basil, thai peppers, garlic and soy sauce....marinate and grill.'Good with grilled vegies esp mushrooms.

Another one -2 table spoons of flour with tumeric, salt, pepper, chilli powder and bake the chicken or grill it...totally indian, oh so yummy. Good with potatoes and yogurt

if you are baking it, try covering it with cream of mushroom soup or cream of chicken. you could even add rice.

make stroganoff and instead of beef use chix. chix potpie. white chili.
