say if i use corned brisket *beef*, not the fresh ones
is it responsible for its chewiness??
is there any way of making it juicy and soft in the oven???

try coating it with a nice spicy mustard and roasting in 325 oven in an oven bag, plastic works best. you may want to add some stock to the bag, maybe vegetable stock. it will need to cook for about four hours. allow to rest for at least 15 minutes and slice very thin against the grain. good luck.

Brisket is a tough cut of meat. Therefore it needs long, slow, moist heat to tenderize it.

Cut off most of the visible fat. Season w/ your corned beef packet, if you want to. Add a cup of water, and maybe some onions, around the base. Let stand under foil on a platter or cutting board about 20 min. before cutting. Cut acrosss the grain, so that the "strings" of meat are not pulled out into strings, but cut across. Serve w/ pan juices.

Place in a roasting pan w/ tight fitting lid OR tight-fitting aluminum foil. Throw it in a 325ºF oven and forget it for 4-5 hours. No need to open and baste or check on it.
