Peanut oil is great for high temperatures and it is mono-unsaturated and there for better for you than crisco and even vegetable oil. Safflower oil is ok to use also but it won't work very well at high temperatures.

You can decide what kind of oil to use. A healthy choice would be Soy Bean oil or Vegetable oil. Also olive oil is not good for frying, but very good as an additive.

Depends what you're cooking, but I would just use in general vegetable oil. You can heat it really high before it starts to smoke.
Sunflower oil is better for sweeter food, and olive oil is best for mediterranean cooking.
