I have a first date tomorrow and I am considering taking her to a coffee shop. On the one hand, I would like to know her coffee values as early as possible; but on the other hand I don't want her to think I'm moving too fast.

I believe its a very good idea , a good & cozy and warm feeling, a place you can talk & get to know one another.
also Not sure about coffee values? but You would know what her taste in coffee is & flavor, or how she likes it, which is good to know.

Good choice. Unless she chooses Fair Trade Organic Arabica, just walk straight out of there. You don't want to get lumbered with a tramp - or worse, somebody who drinks decaff.
