Okay, here is my favorite Mashed recipe. Start with Yukon Gold potatoes (the yellow ones), if possible. If not, it's not the end of the world. Next get some heavy cream (whipping) and heat over the stove till hot, not boiling. If you have a kitchen aid mixer, this is the time to wipe off the dust and use it! Cut your potatoes into quarters, with or without skin, and place in the mixer. Turn on the mixer and slowly pour in the cream. Add some kosher salt, white pepper, and nutmeg! Melt one stick of butter and also mix in. Here is what makes these potatoes special. Cut and onion into rings. In a bowl place about a cup and half of flour and a teaspoon and a half of cayenne pepper. Toss the onion rings in the flour and fry till crispy and brown. Place on top of the mashed potatoes and you have a fabulous side! Good Luck!

Oh yeah! A bit of butter and cream,and add some garlic (oven roasted or minced,raw,stirred in while the spuds are hot). You can always substutute chicken broth for the butter and cream if you want a lower-fat recipe. Other ideas are:
stir in some sundried tomatoes and fetta cheese
stir in some pizza or pasta sauce and top with some mozzarella
stir in some cumin, chili powder,garlic and sour cream for a Mexican taste.

Add some chopped up chives or green onions and some grated sharp cheddar cheese.
Crumbled bacon is good too if you're not worried about low fat.
Try mashing with either chicken broth or sour cream for a change in flavour. Don't forget some salt & pepper! (Not too much salt with the chicken broth though!)

Try mashing them with skins on. Use a potato masher and not a mixer. Add granulated garlic and chives and some butter.
You can also add some chicken stock for flavor.

Kids love mashed potato with bacon bits & cheddar cheese grated over it..sometimes green onions chopped very small

Saute chopped garlic in olive oil in a separate small skillet.
Boil your peeled potatoes with whole cloves of garlic in the water.
Mash potatoes with butter, evaporated milk and add the sauteed garlic. Add garlic salt and pepper to taste. YUMMY
