My Ex used to manage a kebab shop, and the large skewers cost about £20-25 and make about 30 meduim kebabs, so they do have a good margin. Say £3 for a medium donner multiplied by 30 on the spit, gives about £70 profit per spit.
Also, the dude above that says they cook it, cool it and reheat it, you are wrong. A layer is cooked, carved and then the spit is turned off or down and turned back up when the next layer is ready, or about 10 miutes before they need to carve it. If the full spit was cooked through, it would take about 6 hours and the top quarter of the meatwould be ruined.
I know most kebabs are dirty, but like all Food Retailers, they are governed by environmental health, and it is places like those that get hit the worst.

Have you ever thought that donar shops commit the cardinal sin of cooking meat, allowing it to go cold and re-heating it several times before it's all gone. There is no way I'd eat it !!!
