Anything without meat or meat stocks. Yes, chicken stock comes from a chicken. Yes, Gelatin comes from hooves & bones.
Vegetarian doesn't have to be just roasted vegetables and fettucini alfredo.
I regularly make an AWESOME meat free stuffed portabello mushroom. Bake the mushroom stuffed with spinach and herbed chevre then broil with sun-dried tomatoes and cranberries sprinkled on top. Serve on a bed of pasta tossed in truffle oil. Pair with nice Cabernet or Sangiovese.
You could also do a stir-fry type dish - marinade some drained extra firm tofu in soy sauce for an hour or so. Sautee some vegetables, add the tofu, sautee until the tofu is crispy. Add a teriyaki or sweet & sour sauce (check the ingredient label thoroughly) and serve over lo-mein noodles or steamed rice. Pair with a champagne, reisling, or gewerztraminer.
You could also do a Polenta with Parmesan cheese mixed in with a mushroom red wine reduction served over it. Serve on a bed of wilted spinach and possibly candied walnuts. Pair with a fab Pinot Noir.
Start with a great soup or salad (remember about broths and stocks) so that you have to cook less for dinner. Make the salad really awesome. I do an herb mix salad with dried cranberries, gorgonzola cheese crumbles, and pine nuts served with a homemade vanilla vinegrette. The vinegrette is so easy - balsamic vinegar, olive oil, mixed dried Italian spices, and a splash of real vanilla extract.

I recommend Teriyaki-glazed Filet-o-Fu (tofu, that is)
Get a couple of blocks of firm tofu (very important that it's firm -- the softer stuff simply won't hold up to what you're about to put it through). Slice in half so you have two big rectangles about 4 x6 x 1 inches. These have been sitting in water for a long time, so you need to squeeze them to wring out some water so they can soak up a marinade. wrap them in several layers of paper towel, and stick them on a sheet pan, with another sheet pan atop them, weight them down with some cans and come back after about 15 minutes, remove the paper towels. Now place them in a container with 1/4 cup soy sauce, 1 TBSP of rice wine vinegar, and some grated ginger, and let them marinate for about a half hour. Take them out, pat dry, and gently place them on a hot grill. After flipping once (about 3 minutes), glaze with teriyaki sauce and cook another 3-5 minutes. Don't disturb it much; even firm tofu will break up if you handle it too much.
Serve with hot rice.

Have a pasta buffet, make a red sauce, a white sauce, you could have some cooked diced chicken and also some meatballs for those who enjoy meat. Obviously the chicken and meatballs are displayed in bowls by themselves, not mixed in with the sauces. Cook a couple different types of noodles, do a whole grain pasta as something different, have some cheese available for those who enjoy it and have a big salad bar along with it, big bowl of lettuce with lots of bowls of various veggies and salad toppings.
Some fresh bread and butter, for those who enjoy butter and you're good to go. All you have to come up with is dessert.

There is plenty of help at your grocery store...unless you live out in the middle of nowhere.
Call your local grocer and ask what kinds of frozen vegi meals they have.
Now, if you plan on cooking from scratch, you can find tons of great recipes on line, using simple ingredients.
For that matter, if they are not vegans (and will eat eggs & cheese), make a spinach quiche (see link)!
You'd get your iron, protien carbohydrates and calcium!

You can't lose with quiche! It's really easy, too. This link has a whole vegetarian dinner plan.I would just do a basic green salad or spinach salad, myself.

I make vegetarian lasagna. it's pretty impossible to screw up and most people like it.
1 medium eggplant, fresh
1 pkg. frozen spinach
1 pkg. lasagna noodles
1 pkg. (pint, sm. one) low-fat cottage cheese
1 jar Favorite meatless sauce
1 sm. pkg. Mozzarella lite cheese
Salt and pepper
Several plump tomatoes
Parsley flakes
Defrost spinach, drain as much water out with a colander as possible. Cut eggplant in rounds thinly sliced, lay on paper towels and lightly salt, lay another paper towel on top and continue layering with eggplant rounds, salt, paper towel etc. Place a heavy pan on a cookie sheet on top of stack, let sit for at least 1/2 hour to 2 hours. Cook lasagna noodles until tender. Mix cottage cheese with spinach in a bowl, salt and pepper and season to taste. In a casserole pan, spread a light layer of sauce. Add layer of noodles, layer of eggplant, sauce, layer of cottage cheese, spinach mix, another layer of noodles and repeat process until pan is full or desired height achieved. Top with remaining Mozzarella cheese, tomato sauce and cover evenly with thinly sliced peeled tomatoes. Sprinkle on parsley flakes.
Bake at 350 degrees for 45 to 60 minutes, until eggplant is soft and has changed a brown color.
