This is for a super bowl party where everyone tries to one-up each other on the quality of the food they bring. Nothing mediocre or uninspired please!

Bruchetta

Couple of plum tomatos
5 garlic cloves
1 TBSP Olive Oil
fresh or dry basil to taste
salt
pepper
loaf of italian bread cut into very thin slices

Take the slices of bread, and either grill them or bake them until they get nice and hard. Meanwhile dice the tomatoes, garlic and onions. Toss in a bowl with the olive oil, salt, pepper and basil.

Spoon the mixture over the bread slices and you have a very festive(red), extremely delicious app for your party.

Hint: you may want to wait till you get to the party to spoon the mixture over the bread. While the bread won't get too soggy real fast, it eventually will, but that's the great thing about this app, it travels well. Just throw the grilled bread in a bag and tupperware for the tomato mixture!

Mini-Quiches

Ingredients:
8 oz Cottage cheese-small curd
1/4 c Sour cream
4 oz Shredded sharp cheddar cheese
1/2 c Bisquick
1/4 c Melted butter
3 Eggs
Preheat oven to 350 degrees. Mix all ingredients with
Electric mixer. Grease mini-muffin tins or use Teflon ones.
Fill 3/4 full. Bake for 15-20 minutes or until brown.
Hints: Add onion, bacon, mushrooms,etc. May be frozen.
Reheat at 300 degrees or microwave for 3 minutes on high.
Note: These are great! Be sure to add cooked bacon and
Some diced onion. This recipe only makes about
1 1/2 Dozen so be sure to at least double!

I've been making this one for years, so simple but always the first to go at an event. It's really an old standard but the marinade gives it a great twist!

Using 1 pkg. bacon, slice the strips in half and marinate in 1/2 cup bottled honey garlic sauce or 1/2 cup honey mustard. Refrigerate for 2-24 hours. Wrap each bacon strip around a piece of sliced water chestnut and skewer with a toothpick. Place in 400 F. oven for around 20 minutes( turning once halfway through time)
Serve warm!!

Sausage Rolls
1 # sausage meat
1 grated onion(small)
1 grated celery stalk
salt & pepper
1/2 teaspoon sage
1/2 teaspoon oregano
1 egg
2 heaping tablespoons flour.
Mis this altogether well. Roll out your pastry, and cut with an empty 28 oz. tomatoes can. Put some of the sausage mix in each round, wet the edge of pastry with water and press with a fork. Bake 400 degrees, for 20 minutes, or till golden brown. These are always a hit for finger food.

This is always a crowd pleaser!

2 packages of Pillsbury crescent rolls
about 5 beaten eggs
3/4 lb. ham
3/4 lb. salami
3/4 lb. swiss cheese
3/4 lb. mozzarella or provolone cheese.

Do not separate the dough. Flatten dough from 1 pk. on bottom of baking pan (rectangle)
Starting with the ham, layer cold cuts, alternating between meats and cheeses, brushing beaten egg on top of each layer.
Top with second pk. of dough and brush top with egg.

Bake on the temperature on Pillsbury package for about 45-55 minutes. It should be dark, golden brown.
If it starts getting too brown, but the middle doesn't seem solid, too runny, cover with aluminum foil for the last 10 minutes or so.

When they cool off, cut into small squares. You can even make this ahead of time or the night before and and just warm them up. They are even good cool.

Creamy Crab Seafood Cheesecake Recipe

Filling:

2 packages (each 8 ounces) cream cheese, softened
8 ounces mascarpone cheese
3 eggs or ¾ c egg substitute
3/4 cup all-purpose flour
4 ounces cooked crabmeat pieces
4 ounces cooked shrimp, diced
1/4 cup diced onions, about 1/3 of a med onion
1/4 cup diced green onions, about 4 stalks
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp white pepper

Instructions
Preheat oven to 325 degrees F. /160 degrees C. Prepare pan: 6-inch (15 cm) cheesecake or springform pan with 3-inch (7.5 cm) sides, lined with parchment paper.
Filling:
In a large mixer bowl, beat cream cheese and mascarpone on medium-high speed for 3 minutes. Add eggs, one at a time, beating after each addition. Mix in flour. With a rubber spatula, fold in crabmeat, shrimp, onions, green onions, garlic, salt and white pepper. Bake in preheated oven for 45 to 55 minutes or until the top is light brown and the center has a slight jiggle to it. Cool on a rack for 2 hours. Cover with plastic wrap and refrigerate for at least 6 hours before serving. Serve with crackers and/or fresh vegetables.

I know the Super Bowl is over, but a great recipe would be to take flat pita type bread found in rectangle shap, and cut them into strips then, brush with olive oil, and sprinkle with garlic powder, or add the powder to the oil b4 brushin it on, put in the oven on 250 for 2 or 3 minutes, but make to keep an eye on them, so they won't burn. Very tasty treat.similar to that of pizza. You can also add some Oregano to kick it up a notch.

Super easy. Preheat your oven to 375F. Take a pint of softened (room temp is fine) cream cheese (garlic or chive, or any flavor that will go well with pizza) and spread it on the bottom of a 8x8 or 9x9 casserole dish. Pour as much pizza sauce to cover, more or less, depending on your taste. Cover with mozzerella, provolone and parmesan cheeses. Add any pizza toppings that you prefer, mushroom, onion, peppers, pepperoni... Microwave for 3 minutes to get it kick started, then transfer to the oven and bake for 15-30 minutes until softened, melted and heated through. Time depends on microwave, and amount of toppings. Serve with chips of your choice, garlic pita chips work well, bagel chips, tortillas, crackers. It's guaranteed to be a hit!

Buy or borrow an electric fondue pot, and make tempura!
It's basically a smorgasbord of foods to fry by each individual. Get a batter recipe online, and use things like pearl onions, small shrimp, pepper chunks, broccoli or cauliflower florets, par-boiled new potatoes, mushrooms---anything. Each guest or couple dips & fries whatever they'd like---it's really a lot of fun!

Seafood Stuffed Mushrooms

2 Lg Sea Scallops (sauteed till cooked)
4 Lg precooked cocktail shrimp
1/2 lobster tail precooked
dice all seafood to equal size
save butter from sautee pan add to crackers
1 sleve of Ritz crackers finely crushed
mix all ingreedients

30 lg white button mushrooms, mince stems add to seafood

fill stemmed mushrooms, put into casserole dish bake 15 minutes at 350 degrees. then add bottled Alfredo sauce to top of mushrooms, cover mushrooms with mozzerella cheese bake another 15 minutes or until alfredo sauce and mozerella are hot and bubbly.
