They aren't hot to touch so why do they taste hot? Any technical explanations (that we can understand) anyone?

Capsasian (sp) It is the chemical in chillies that give them their thermal units or their hottness.

The reason peppers are hot is the capacin on the inside of the pepper its in the seeds and the membrane surronding the seeds but when a pepper is deseeded some spicyness will still remain from the membranes on the inside attached to the wall and the higher the capasin the spicier the pepper which is why when using certain peppers you should wear gloves so that it wont burn your hands or 'stain' your skin and then touching your eyes after a handwash would still burn them so i know i didnt spell the capsin right but thats how i think and its pronounced that way so hope that helps

The measurement for this heat is measure in SHU's or which is a heat unit. A habenero can range from .5 million SHU' to 1 million SHU's.

A jalepeno is anywhere from .3million to .5 the higher the hotter.

Well i live in the chile capital of the world. Alot of people say that its the vine inside, but who knows really. If you think about it, it burns you if you touch it and then touch a part of you body!

I think it's the acids or whatever in the seeds and in the juice, but the seeds are usually the worst.
